MARKETING UPDATES
IT’S ON US CORVALLIS PARTNERSHIP
The It's On Us Corvallis/Block 15 Open Tab partnership officially begins this weekend! As promised, here's the rundown on how this partnership will work:
IOU Corvallis is providing Block 15 with $3,000 to provide meals to the community. We have worked with their volunteers for the past several weeks to create organized, safe, and equitable access to these meals, maintain COVID-safety requirements, and to make the process as seamless as possible for our restaurant team members.
Due to limited seating in the restaurants and fluctuating risk levels in Benton County, we have decided to offer the Open Tab program through the downtown take-out and delivery service only.
On Friday 3/5, we will post on social media announcing the partnership, and make a lottery available to interested guests. The lottery will close on Sunday 3/7 at 8pm, and we will randomly select entrants on Monday 3/8. The folks selected will receive a unique one-time discount code good for up to $15/meal, which will be redeemable via the downtown ordering website. This form will be available in English and Spanish.
In addition to IOU's $3,000 contribution, Block 15 is contributing an additional $300 toward the total available Open Tab amount. On Monday 3/1, we activated the community donation button to allow our guests to contribute to the It’s On Us Open Tab Program as well.
Pub/Delivery FOH Info:
Guests can redeem their codes Monday 3/5-Friday 3/12. Codes are good for food only. The $15 amount, no dine-in, and food only are clearly communicated on the lottery signup, but we will be asking our FOH staff to do their best to help guide folks in the right direction if they have questions or incorrectly try to apply the discount to alcohol.
Discounts are NOT eligible for cash back - if someone does not use their entire discount, the remaining amount will be returned to IOU to support their mission.
This should be very easy for you to execute as a restaurant employee, but please let a manager know if you have any questions!
BLOCK 15 SELECTION SERIES IPA
This week marks our next release in the Block 15 Selection Series IPA’s - Citra! The Mosaic one was super well received and popular, so make sure to get your hands on some of the next releases!
FRIENDS AND FAMILY SPECIAL RELEASE - COMMON BOND IPA
We created this as a friends & family beer for accounts and friends as a “thank you” for the last 13 years of support, great work, and enthusiasm.
4-packs will be going out to these folks starting this week and as part of this, every employee will receive a free 4-pack of Common Bond!!! You can pick these up at the main location you work at - the managing bartender will have an employee list and will be marking names off as the 4-packs are picked up. Let a manager know if you have any questions.
The draft for this beer will be available starting Friday at both locations for public consumption, however the cans will only be available for the people on the friends and family list.
Thank you for all of your awesome work through these last 13 years, and especially the last year!

With an unobtrusive grist profile and soft water base as the canvas, this beer is meant for Citra’s vibrant notes of tangerine, peach, and passionfruit to shine. // 7% ABV // $4.00/can, plus deposit
Dortmunder Export // Dortmunder Export Lager // Our Dortmunder Export is a study in classic lager balance, giving equal voice to biscuity malt flavor, crisp hop bitterness, and a clean lager yeast character. // 7% ABV // $2.75/can, plus deposit

GENERAL UPDATES
As Daylight Savings, nice weather, and changing COVID-mandates start to come upon us, please keep an eye out and pay attention to updates, new mandates, and changes to hours, protocols, logistics changes, etc.!
PUB UPDATES
Unless they come with some cream or need a spoon to stir, hot drinks no longer need to come on an app plate with a napkin.
Outdoor planters (large ones on the 3rd street side, and the one in front of Caves) should be watered twice a week now (Wednesday and Sunday by the Delivery Drivers), with two pitchers of water each. Please pour the water slowly and evenly over the soil to ensure proper saturation. Plants under the tent should be checked for moist soil on Sundays and given one glass of water each if needed.

Just an FYI, one of the three canned cider options we have, Cosmic Crisp, is 8% ABV! So please make sure to let folks know that before/as they are ordering it!

At the Tap Room, please collect completed stamp books in the cash drawer so that they can be collected on or around the first of March.

PEOPLE’S PINT HAPPENINGS
We are excited to announce that Block 15 will be partnering with It's On Us Corvallis in early March for their Open Tab program! More info on the specifics of the partnership will be in next week's newsletter. This week, we want to give you a quick introduction of IOU and what they are all about.
IOU was cofounded in April 2020 by three Corvallis Sustainability Coalition Food Action Team volunteers. The mission is to build community and help the economy through food - IOU pays local restaurants to make meals for the community. IOU Corvallis is a community-building program with a food access side-effect.
IOU was created to retain local dollars the most impactful way - by retaining local jobs. It’s an economics concept called Local Multiplier Effect. Rather than gifting meals or cash to folks who have lost their food service job, IOU hopes to help retain local employment opportunities and lessen the economic impact for individuals. In food systems theory this is called a market intervention.
IOU's Open Tab program is funded by donations from the community and features a different restaurant in Corvallis each week. That restaurant is provided with $3000 to open a tab. There is no need-based requirement or assessment, and anyone is eligible to utilize the tab. The downtown take-out and delivery service will be participating in the Open Tab program as part of our partnership, and we will give you the whole rundown of how the partnership will work in next week's newsletter.
Essentially, It's On Us Corvallis is a really innovative, unique, and uber-local program designed to support YOU! We all know it's been a pretty rough year for the restaurant industry, and IOU found an awesome way to help Corvallis restaurants stay in business and keep people working while also feeding people in need. The volunteers behind it are our customers (literally, you've probably worked a Bloktoberfest or three with them). This is an incredible example of Corvallis taking care of its own. We've watched this program grow since its inception, and we are thrilled to become a restaurant partner and introduce B15 fans to their amazing work.

Starting next week, we will be releasing a series of one-hop IPA’s that focus on the unique and awesome characteristics of each featured hop. The other neat part about this program is that we feature the farm each of these hops is grown at as well!
These will release every week for a few weeks, and will be available on draft and in cans. More info will follow next week with the first release (Mosaic fans, rejoice!)!

Tough Sledding // IPA // Teaming up with our friends at Ruse Brewing, we harnessed a hop collective of Sultana oil, Citra, NZ Pacific Sunrise, and NZ Cascade to produce this hop forward hazy IPA that bursts with tropical and citrus notes. // 7.3% ABV

Chickpea Shawarma
*Replacing the Vegetalian both the Pub and at the Taproom!*
Our vegan take on the classic middle eastern meat dish, traditionally cooked on a vertical spit. Gently roasted chickpeas reflecting the same spices of paprika, coriander, cinnamon and garlic nestled in a warm house baked pita with our cool garlic-dill tahini sauce, tomato, onion and arugula. Finished with a fresh, medium heat, chili sauce called shatta. This is a hearty, fresh vegan sandwich packed with complimenting flavors.
*Shatta is a middle eastern fresh chili sauce consisting of green (jalapenos) and red (cherry bomb) chilis, cilantro, garlic, lemon juice, aleppo pepper, olive oil and vinegar.
*This sandwich is totally VEGAN! Feta for non vegans is a great upcharge though! :)
FOH: Please do not encourage subbing protein for the chickpeas for this sandwich! The whole point is to get all that killer flavor that comes from the chickpeas! If a guest insists, please accommodate but do let them know that they will be missing a large element of the flavors the sandwich provides. Adding a protein is not an option, as it will not fit in the flatbread. A protein sub has no cost difference.
ADDED NOTE! With the addition of julienned red onion on the line, we will switch from using the burger sweet onions on the SW Salad to the red onions!

PUB UPDATES
There is now a corkboard in the Breakroom that displays beer description sheets for our upcoming releases. Please be sure to review this board before each shift (both Front of House and Back of House) to learn more about our awesome upcoming releases.
Front of House, please check in with a manager before adjusting any inventory count numbers for cans, bottles, or to-go cocktails. These numbers are carefully put in, and there may be times where we appear to have a few cans left of something that is 86'd in the system, but that often means that it has already been ordered by a customer and is not currently available.
We have set notifications to pop-up as you all clock-in now. This will serve as our way of communicating "Focus Points" going forward. For this week, we would like everyone to focus on logging their temperatures as they clock-in.
We should always focus on top to bottom cleanliness when it comes to bussing tables. Please make sure to wipe down table tents and check under tables for food and other debris before seating tables.
It's Breakroom Tidiness Awareness Week! All dishes should be bussed upstairs, personal belongings either hung-up or organized and out of the way, and aprons/hotpads either in your cubby or in the hamper if it is a kitchen apron. This is a shared area, so let's please keep it looking nice. Also, remember to sanitize your area after you are done with your break!

The DAB Lab, Lil Dab // Dry-Hopped Pale Ale // The DAB Lab series focuses on vibrant hop-forward ales that prominently feature hop extractions. PUB UPDATES
While we are remaining in the Extreme Risk category for the next couple of weeks, we still have some small maintenance and cleaning projects to knock out before we reopen for dine-in. For those of you that are working the floor or take-out/delivery, please check in with a Pub manager about tasks that can be completed.
We have added bottles of Broadley Vineyards "Claudia's Choice" Pinot Noir and Anne Amie "Twelve Oaks Estate" Pinot Blanc to our Take-Out and Delivery menu. Once we move through those (there are about 7 bottles each of the Pinot Noir and Pinot Blanc) we will switch to offering Compton Family Wines "Garden Series" Pinot Noir and Pinot Gris on our Take-Out and Delivery menus. Info on our current Pinot Noir and Pinot Blanc can be found below, as well as info on the Compton Noir & Gris (which is currently available at the Tap Room).
Broadley Vineyards, Monroe, OR // "Claudia's Choice" Pinot Noir // Dark garnet color in the glass. A complex nose unfolds with aromas of blackberry, cassis, damp earth and cardamom spice. Somewhat rich and plush on the palate but energetic in a mid-weight style featuring purple and blackberry flavors with a hint of black tea. Nicely balanced finish.
Anne Amie Vineyards, Carlton, OR // Twelve Oaks Estate Pinot Blanc // A soft, round mouth feel enhances pear and citrus flavors with hints of vanilla, leading to a long, rich finish.

Garden Series 2018 Pinot Gris // This fruit-driven Pinot Gris brings crisp, juicy, enticing flavors that perfectly mix pear skin, rich apple, peach, and apricot flavors. Texture to spare with a broad mid palate and crisp natural acids.
Garden Series 2018 Pinot Noir // Fresh and attractive violets on the nose here with a supple and juicy array of very fresh red cherries that flow to the palate, where they are delivered amid succulent, upbeat tannins .

SUTTLE LODGE WINTER BEER FEST - VIRTUAL ADDITION!
Beer festivals are (kinda) back!!
This year, we are participating in the 2nd Annual Winter Beer Fest at The Suttle Lodge on February 20th. If you are unfamiliar, the Suttle Lodge is an oh-so-cool resort just west of Sisters. This year the festival has gone virtual, where $40 gets you a mixed 6-pack and an insulated Miir camp mug, with proceeds going towards the Independent Restaurant Alliance of Oregon. In addition, there will be an evening of online brew talks, live music, raffles, and cooking tutorials. Happy drinkers with internet will find Cold Front or Joy cans in their mixed packs…if they get lucky!
If you’d like to participate, but can’t make it to the Portland, Bend, or Hood River pick-ups for the beer and mug, there is a $25 option to donate and participate in all the online activities.

GENERAL UPDATES
As more folks are coming back to work, don't forget to take your temperature daily and record it on the log at your respective locations.
We will soon be adding 750mL bottles of a Pinot Noir and Pinot Gris to our take-out/delivery menus at both the Tap Room and Pub. Keep your eyes peeled on HotSchedules for an update on which wines we are offering.
In a change from previous years, we will not be holding onto Bourbon Experience stamp books at either location. Please encourage guests to keep these in the wallets/purses. They are tiny and adorable and fit perfectly in card slots in wallets.
Super Nebula, Dulce de Leche sold out in bottles SUPER quickly via the Drive-Thru Sale, FYI! So if a customer asks (or you as an employee was wondering), we will have some available the day of. But overall, please just let customers know this was a very limited batch and we did just run tight on it!

Blended after conditioning for two winters on local Montmorency cherries from The Cherry Country, Kriek marries the extraordinary expression of tart, orchard fruit and a delicate barrel character. // 7% ABV

PUB UPDATES
As we move back into the Caves this Friday for Take-Out and Delivery during dinner, it will be incredibly important to keep up our great communication. Whether we are running low on a food item, or packaged beer/cocktail/wine, please remember to communicate these changes with folks at both restaurants.
Delivery Drivers: currently there is a list of duties that Drivers are expected to complete before leaving for the evening. Please continue to check this and fulfill duties at the Pub/check out with the Pub bartender before clocking out. Some duties will shift and change with our new operations, so please refer to this list for those specific changes.
Another note for Drivers: if you are waiting on a delivery to come up, please check in with the Pub to see if they need any assistance (bussing tables, running food, getting folks sat, etc). The Pub bartender and Delivery Lead will each have a walkie-talkie to communicate when your order is up and when they need you back to run the delivery.
The Jungle Bird is fully batched out now (meaning that the backs contain the pineapple and lime juices as well). To make the Jungle Bird now, all you need to do is measure out 5.5oz of mix, pour it over ice into a shaker tin, shake for 10 seconds and strain over ice into a rocks glass. The Whiskey A Goji will be full batched by this Friday as well and the process will be the same as the Jungle Bird, but with 4.25oz. of mix instead.
TAP ROOM UPDATES
Just a heads up - it is illegal to keep full propane tanks inside for safety reasons, so if we pull full ones to have as easy backups, please just store them by the kitchen door area during open hours and then lock them up through one of the other two heaters at night!
Keep an eye on the cocktail/beverage fridge and ensure the door is closed and things are looking tidy!

Last week we gave you a basic rundown of Bourbon Month happenings, but this document has a bunch more detailed information on all the things that are going on!!

BOURBON MONTH RELEASE BEERS
*These will be releasing on Monday, 2/1 as this is the start of Bourbon Month and we want the beers on first thing!!!
Super Nebula // Bourbon Barrel Matured Imperial Stout with Cocoa Nibs // Each year we mature Super Nebula—an imperial version of our Nebula stout—in unique bourbon barrels, followed by conditioning on cocoa nibs selected to complement that year’s blend. 2021 Super Nebula was matured in Basil Hayden bourbon barrels and then conditioned on direct trade wild harvest heirloom cocoa nibs from Bolivia. // 13.25% ABV
Super Nebula, Breakfast with Hayden // Bourbon Barrel Matured Imperial Stout with Cocoa Nibs // This special variation of Super Nebula was matured in Basil Hayden bourbon barrels and conditioned on direct trade wild heirloom cocoa nibs, maple, and freshly roasted “Flame On” coffee beans, our collaboration roast with Bespoken Coffee Roasters. // 13.25% ABV

Kriek // Oud Bruin Ale Spontaneously Fermented in Bourbon Barrels with Cherries // Kriek, a Spontaneous Cuvee is created by filling bourbon barrels that once housed Super Nebula with an oud bruin, then spontaneously fermented in our wild cellars. Blended after conditioning for two winters on local Montmorency cherries from The Cherry Country, Kriek marries the extraordinary expression of tart, orchard fruit and a delicate barrel character. // 7% ABV

THIS WEEK’S MENU ADVANCEMENT ITEMS
With the superb advancement of the ciabatta for our newly advanced menu items, we are transitioning all ale bread applications to ciabatta! The tuna melt and vegetalian as of Wednesday will be served on our ciabatta! Procedures have been posted in respective kitchens!
A big thing to remember is that the new ciabatta is NOT vegan like the ale bread was. If a guest is looking for a fully vegan sandwich, please offer a burger bun or flatbread and inform the kitchen that it needs to be fully vegan. The vegetalian is next on deck for our advancement team to tackle so this should only be for a short time.

Love Potion No. 9 // Chocolate Raspberry Stout // This sweet stout was brewed with a tantalizing blend of specialty dark malts and conditioned on chocolate and a delightfully tart combo of red and black raspberries. A most romantic concoction, Love Potion No. 9 balances rich malt and chocolate flavors with vibrant berry character. // 7% // $4.10/16oz can
Turbulent Consequence, L'Ancienne // Spontaneously Fermented Ale // L’Ancienne, our most mature Turbulent Consequence release to-date, blends stock from barrels aged 36, 48, and up to 60 months old. Turbulent Consequence is brewed using classic lambic methods from the Senne River Valley in Belgium, including a multi-step turbid mash, inoculation with resident flora in our wild cellar’s coolship, and spontaneous fermentation and extended maturation in oak barrels. Mature barrels are then used in various blends throughout the year. // 6.7% // $11.50/500mL bottle

BOURBON MONTH PREVIEW
It’s mid-January, which means Bourbon Month is almost upon us!!! We will have considerably more information for you in next week’s brewsletter, but here is a brief overview of what the month will look like in these (still) COVID-times.
BOURBON LIST & COCKTAILS
More details will be available next week regarding the official bourbon list, as well as what cocktails we will be offering. With the launch of our Traveler cocktails, that means we will be able to offer some things to go as well.
For the first time ever, the Tap Room will also have all the bourbons available, so someone participating will be able to partake at both locations!
BOURBON MONTH STAMP BOOK
We’re changing it up this year and doing a stamp book (official name TBD) instead of a passport! It’ll still serve the same purpose - keeping track of what bourbons a customer has sampled. Stamp book completers will get a pair of specialty etched rocks glasses!
BOTTLE RELEASE OPTIONS
Seated Brunch, Saturday 2/6 // We are offering our seated brunch with pre-ordered bottles at both the Downtown Pub and Southtown Tap Room heated outdoor seating areas, beginning at 9:00am. The lottery for this is already closed and Paige will start sending out the first round of sign-ups tomorrow. There will be no tables at either location for guests that do not have a reservation through this lottery until the respective locations open for normal service!
Saturday Drive-Thru Sale, Saturday 2/6 // All release bottles will be available for customers looking for contactless pickup through our Drive-Thru sale. The online store to place pre-orders for this option will open on Tuesday, February 2nd at 5pm, and will close at 9am on Friday, February 5th. All orders through our Drive-Thru sale will be fulfilled in the back part of the Tap Room parking lot on Saturday, February 6th from 10am-2pm.
UPS Delivery // We will ship our specialty release beers via UPS (Oregon addresses only) on the Thursday before the release. This allows our guests that are not wishing to travel to still get their hands on the release beers, shipped directly to them. This ordering option will be available beginning Tuesday, February 2nd and will close Thursday, February 4th at 8:00am.

Strozzapreti literally means “priest choker or priest strangler” (maybe don’t share that with guests, just an interesting bit of trivia!). Its a flat sheet of pasta that is rolled for 2 sides to form a long s shaped noodle.
A kids version of this mac and cheese will also be on the kids menu! Garnished with just breadcrumbs, sans parsley like before.

We have some new barrel tables that sit against the side of the building on the patio underneath the three large windows! These are extra seats for walk-ups primarily - because they are not near direct heat, we want to treat them like we do the entryway/lawn tables. Warm Roasted Vegetable & Lentil Salad
Our advancement team killed it with this one, y’all. It is absolutely beautiful, healthful, and yet hits you like a comfort food! OH and it is 100% ORGANIC! Warm lentils, cumin & coriander roasted carrots & parsnips, tender spinach & arugula, light lemon vinaigrette, bright tzatziki, and a pile of fried parsnip crisps! I am so excited for this to join the Block 15 menu!

Classic Mac & Cheese
Let’s be real, there are few bad mac and cheese out there. And ours was one of the best! BUT we decided it was time for an upgrade! Test after test...after test….we believe we really nailed it! It’s simple in concept, yet hits you with a punch of flavor, with a unique new pasta (to us) to boot! The Strozzapreti really gives us an upgraded feel to a classic pub dish. Adorned with our same bomb parmesan breadcrumbs, I am super stoked about this dish!
HOPPY HOUR UPDATE
There have been some questions about happy hour as we rolled out Toast. After some conversations, we have decided to suspend all happy hour item discounts (food and drinks) for now. If Mug Club folks ask about happy hour, the discount can be given by request (or offered to mug folks on Mondays) but the POS will not automatically apply that discount going forward. As things re-open, we will re-examine this policy, but wanted to clarify it for now.

While the Caves space isn't currently open to the public, we do want to keep it tidy and organized. Bathrooms should be cleaned once a week, and there will be some cleaning/organizational projects added to Take-Out & Delivery duties lists.
On the topic of tidiness, please be mindful of the presentation of our dining room and back server station. We want to keep the restaurant looking nice and organized for the guests that use the restrooms or come in to pick-up/place an order.

Block 15 Improved Burger!
Our burger is the #1 selling food item at Block 15, so naturally every now and then we take a dive into WHAT on earth we can do to make it better! The advancement team dove in and we decided to “beef” up the patty size (hehe) by 3/4 of an ounce and develop the perfect house made pickle to complement. Sometimes the smallest changes can make the biggest difference. Though minor, we are VERY excited to present the new and improved Block 15 burger with house pickles! ::DROOL::
Tuscan Chicken Sandwich
As part of the advancement team Simon put his efforts into boosting one of our OG sandwiches to be A+++++! In our opinion, he succeeded. By using a full, seasoned sous-vide chicken breast the sandwich is juicier, and more flavorful. Taking it to the next level by also replacing raw onions with balsamic pickled onions and our NEW house baked ciabatta this sandwich is better than ever.

Starting Friday we will be offering cocktails to go at both locations! Woohoo!

2021 CULINARY WEEK!
Every January, the Downtown Association puts on Corvallis Culinary Week and this year we have opted to participate at the Downtown Pub from January 13th to January 31st! With COVID and all the weird times we are in, they have changed it to Culinary “Month.”
Restaurants in the community are to either feature a $10 lunch or breakfast item OR a $15 dinner item! We will be running the latter.

While we are not currently taking reservations at the Downtown Pub, we are taking up to a few names on the waitlist at a time. Please use the Host iPad to do this if you are taking someone's name down.
On Friday we will be adding the Whiskey A Goji and the Jungle Bird--which is a tropical cocktail with aged rum, toasted coconut Aperol, demerara simple syrup (raw sugarcane with a slightly more molassas-y flavor), pineapple and lime juices--to our in-house and to-go cocktail menus.
The plants in the planters still need to be watered (although less often during the winter months). On Sundays, please ensure that each planter gets hit with one pitcher of water (minus the one sitting in front of Caves).

MARKETING UPDATES
BLACKLIGHT BATCH CONCERN
Recently, one of our accounts informed us of a select number of Blacklight cans containing an off-flavor. Taking that important feedback with gravity, we followed-up with internal QA/QC testing, and identified that the batch of Blacklight packaged on 10/22 had encountered an issue during production and developed acidity over time. While completely harmless, this does not align with the vision and intent we pictured for Blacklight. This is also not what we want our amazing customers to experience.
We have confirmed that only a part of the run contained the issue, but have no way of identifying the problematic cans from the non-problematic cans. So in order to ensure the best customer experience, we are recalling all of our unsold cans from this run.
Our distro team is tracking down as many cans in the marketplace as possible and swapping them out for great tasting Blacklight. But there is a possibility that we miss some, or that customers have already purchased these cans from our accounts.
If any customers come to you with feedback on Blacklight from the 10/22 run only, please let Heuchert know and he will issue an exchange or gift card, depending on the situation.
We don't imagine this being a common occurrence, but we want everyone to be informed and prepared just in case.

Toast Updates for online ordering:
Gift cards are accepted, but the number needs to begin with an “8”. If you have a physical (or square) based gift card that a guest is trying to use, but can’t, then a FOH manager can log into the back end of Toast and get the Toast specific account number to use going forward. The old plastic cards work successfully in either location to swipe (or manually enter).
Toast does not allow the entry of discount codes for employee food or beer discounts through the online system. If you are ordering items that should be discounted, please enter special instructions under one item on the order detailing what discounts should apply, and then a FOH manager can go back into the ticket and apply your requested discounts.
FYI, we have a 90 day grace period on expired Oregon licenses and ID cards. 90 days from the expiration date is when it expires for our purposes in house, so please keep that date in mind when checking ID’s.

Oregon has just approved cocktails to-go! We are currently curating our menu and intend to launch Block 15 cocktails to-go in the near future (woot woot!). Keep your eyes out for more info on our program, as well as guidance from the OLCC.
Our expanded outdoor seating is going live! We will have 5 tables as well as heaters and cozy lighting. Currently, we are still not accepting reservations given the limited amount of seating that we are able to offer. If folks want to put their name on the waitlist for a table, we are able to place up to three groups on the waiting list at a time.

HOPPY NEW YEAR CAN MISTAKE
In pure 2020 fashion, when we received our Hoppy New Year cans this year in preparation to can the beer, we noticed something strange…the year on the can, in the description, is….you guessed it…2020. This is obviously a mistake, as no one in their right mind would ever want to ring in 2020 again, but we have to roll with the punches (isn’t that the motto for this year???) and make the best of the situation at hand.
So with that being said, please refer to the below verbiage (pasted from our social media post) and relay this to any customers who may have questions or be confused.
“Nobody in their right mind would LIKE to ring in 2020 all over again—but apparently our cans would!
Somewhere along our wandering journey to canning, this year’s run of Hoppy New Year were misprinted and are in the same cans as last year—including our naively optimistic write-up for 2020…you can’t be right all the time!
To be crystal clear, what you’ll discover inside this can is a damn tasty IPA, brewed fresh to kiss 2020 goodbye and welcome in 2021.
So let’s all roll with the trips, slips and forehead slaps of this past year, and toast to unbridled optimism for the new year.

Just a reminder to everyone - the smoking area at the Tap Rom (for both customers and employees) is next to the silo, and only there.
There are posted “No Smoking” signs in the breezeway area, and those need to be followed. That breezeway area with the pallets and barrel racks is directly below the louvres that pull air into the brewery and when people smoke there it pulls their cigarette/vape smoke into our brewing area.
Additionally, if you are utilizing the smoking area, please keep an eye out for stray butts and dispose of as necessary, and check the butt receptacle and make sure it’s not overflowing!

LUCIDO UPDATE
Just as an FYI, with the release of Lucido this weekend (see below) we want to be very intentional in our wording about it being a bit low on the carbonation spectrum - we released this beer as being intentionally lightly carbonated. Here is the write-up Pascal created for social media, so please use verbiage like this if customers ask:
“A low-carbonation wild ale derived from blending young & old dark varietals in Florio Marsala barrels, Lucido shines with notes of almond Rocha, figs, and tart cherry pie. Combining a rich, gently sweet malt base with tart acidity and a hint of barrel character, this wild ale will continue to develop in complexity over time.”
WILDFIRE RELIEF FUND
We have closed the books on our Wildfire Relief donations program, and are extremely proud to announce that we will be donating over $1,040.00 to the American Red Cross, Oregon Wildfire fund! This money is passed on to Oregonians directly affected by this summer’s wildfires. Thanks to everyone that donated and/or spread the word to our customers!
NEW MENU ITEM NEEDS A NAME!
As mentioned below as well, we’re doing some menu advancement on our menu currently, and one of those pieces is adding a few new items! In doing so, though, we want to make sure that item has a catchy and fun name that draws people to it, so we want your help with giving us ideas!
The first new item we’re adding is a sort of bowl-esque offering with roasted carrots & parsnips tossed in cumin & coriander, arugula tossed with olive oil & lemon, and green lentils, drizzled with tzatziki sauce and topped with crispy parsnip pieces. The root veggies and lentils will be warmish, so it won’t be hot per se but will definitely be hearty. Every single item in the bowl is organic as well!
If you can think of a fun, unique name for the new item, please feel free to input it in one of the verification questions (it won’t be a mandatory one so you don’t have to fill it out if you don’t have a suggestion). Or if you want to reach out to Sarah with more in depth feedback/ideas, feel free to!

Lucido // Blended Dark Wild Ale 33% Matured in Marsala Barrels // This blend of young and old dark wild ales combines a rich, gently sweet malt base with tart acidity and a hint of barrel character derived from one third of the blend maturing in Florio Marsala barrels in our wild cellar. Enjoy fresh for notes of Almond Roca, figs, fudge, and tart cherry pie—or let it develop further in the bottle, allowing the wild character to develop complexity over time. // 8.5% // $10.00/500mL bottle

Our Toast launch has been pushed back a bit in order to have a clean start - we will now be launching it on Monday, December 21st.
With the launch of Toast on Monday, we will be bringing back cash! Since the bills aren’t as easy to sanitize as a plastic credit card, ensure you are being diligent about washing your hands.
Additionally on Monday with the Toast launch, growler fills will be returning! Please ensure that you are wiping the growler immediately with a sani rag and washing your hands after you’ve grabbed it. Then put the used tube in the dirty rack immediately after use. We will not be selling growler glassware at the moment, we’ll just be filling empties that customers have brought in.
With Benton County transitioning into the Extreme Risk Category, starting Friday, December 18th we will no longer be offering indoor dining. The Pub’s hours will be shifting (see below) and will primarily be transitioning to Take-Out & Delivery, however if folks do want to sit outside they can as walk-ups (no reservations). The Tap Room’s hours are staying the same, and we will be putting up a new tent in the parking lot with 6 tables to have additional seating.
Per Sarah’s HotSchedules message, we are doing some menu advancement, which means we’re updating some of our current items and adding a few new items!
Starting Wednesday, December 16th, our Meatloaf Sandwich (Pub & TR) and Buttermilk Fried Chicken Sandwich (Pub Only) will be modified to make them A++++! We are also adding an Artisan Plate (Pub & TR) to the menu as an appetizer option.

We are rolling out a new ciabatta bread, which will eventually be taking the place of our ale bread, and just as an FYI this will not be vegan!!
Next week the Drive-Thru sale will actually be on Thursday, December 24th (instead of Saturday, the day after Christmas)! This will allow people to stock up on delicious beverages before the holiday. With that being said, the store will open at 9am on Monday and close at 9pm on Wednesday, for pick-ups on Thursday!

We are creating new Floor Opening & Closing lists, as well as updated Take-Out and Delivery lists to ensure that all duties and projects are being completed. Please keep an eye out for these if you are working these shifts.

Our outdoor tent goes up on Thursday, with seating inside of it live on Friday!! It will have 6 total tables with a max capacity of 36 patrons. The tables will be strategically placed to be near heaters so they are as warm as possible. We’re also working on getting some decorations for the tent so it looks a bit nicer than just a plain tent - think plants, barrels, etc.
If you go and replace a propane tank and you notice the cage is starting to get low, please let a manager know so we can ensure that the cage gets restocked before we completely run out!!!!
With indoor dining going away, our Floor Opening & Closing lists will also be changing a bit, so make sure you’re checking things off and not just going by memory.

Starting the end of next week, we will be shifting our POS system to Toast! This is a fairly common system that is used by a number of restaurants, and it’s biggest benefit is it has a super intuitive online table ordering system!!!! The shift should happen next Thursday, December 17th. Thank you in advance for your flexibility in rolling out this new system - it should make a huge difference in the long run!
Another note on Hard Cider - we can offer crowlers of it to customers! The one very important caveat is that the crowlers have to be filled by winery/brewery staff. So they will be pre-filled and available to sell - if we run out at a location, we will be out until the winery staff has filled more.

FORELAND BEER DISTRIBUTION
We are excited to announce that beginning in late November, Block 15 Distribution will begin delivery newly-established ForeLand Beer to bottle shops and markets throughout Oregon, with Washington following shortly thereafter.
ForeLand Beer, located in historic downtown McMinnville, Oregon will primarily focus on lagers, hop-forward beers, and mixed culture beers. MARKETING UPDATES
No major updates this week - we’re taking a breath from all the craziness of last week’s Late Fall Bottle Release (and preparing for an announcement later this week!).
GENERAL UPDATES
It is the expectation when you are actively working that you are practicing social distancing. When either on break or after shift, only members of the same household may sit together. At the Pub, the Brewbar and Bar seating at B9/10 may only seat 1 employee/ household at a time. At the Tap Room, Tables 13, 14, 15, and 16a & 16b are single-use only. The picnic tables/other 6-tops can seat two people at opposite ends with appropriate social distancing. Furthermore, changing out of your work clothing does not alter these rules. It is not so much about the perception to the guest but the actual practice of safety and social distancing that we are after, especially with the recent spike in cases. Let’s stay safe and healthy so we can stay open and keep slingin’ burgers and beers for as long as possible!!
DOWNTOWN UPDATES
The Corral will be going away soon with the cold and inclement weather. The outside heaters and umbrellas will help to keep the 100's comfortable and welcoming for our guests.
Sean took some time to reorganize the packaged beer in the Caves walk-in cooler recently (thanks, Sean!). Some of our recent Brunch release beers (both Imagines and Figgy) will now live outside of the cooler along the wall. Please check the inside and outside of the cooler thoroughly before 86'ing an item.

On a similar note as right above, DK has recently nicely organized the brewer’s side of our Tap Room cooler. Paige will probably tackle digging into organizing the TR side here in the next few days, so once that happens please keep it tidy! Don’t let empty bottle boxes or excess flats stack up - either break them down and recycle them or neatly put them over on the cellar stash pallet by 16b.
Our extra Late Fall Release bottles live on a pallet right outside of the walk-in door, so (like above) check that pallet before officially 86’ing something.

As most of you know, this weekend is our Late Fall Bottle Release Brunch! We’re hosting brunch at both the Pub and the Tap Room (spots are all filled so it’s all good to go and set). We are also having our Saturday Drive-Thru Sale, where the general public can grab the release beers via pre-order (the pre-order will close at 9am on Friday morning)! Beer is also being shipped out via UPS tomorrow for those folks who aren’t local but still wanted to get their hands on release beers!
The Tap Room will have the release beers in-house after the brunches and the Drive-Thru Sale, so if you encounter someone who is interested in getting bottles you can let them know that (as always, while supplies last, though!). Please let Paige know if you have any questions!

As a reminder, all employees need to be aware of where they park downtown between 9am-5pm if they are on the clock. If you are working in any capacity, you cannot park in the free 3-hour spots. Here is a breakdown from the Downtown Corvallis Association for you to reference!

We have half umbrellas for the original picnic tables outside (the 100's) for when the weather turns. These umbrellas use the same bases as the ones in the corral, so we won't be able to have both sets assembled at the same time.
A replacement glass case for the heaters is on its way. Once it arrives, we will be able to use the second heater again.
Since we are gearing up for a large beer release this weekend, we will slowly start running out of some draft options over the next couple of days. Be sure to check the 86 list and whiteboard when you start your shift!
Starting this weekend, we will have bar backs scheduled at the Caves Public House on Fridays and Saturdays to help support the bar and flow of the restaurant.

We’ve adjusted the way that the front entryway is set up a bit, this is to ensure that those folks sitting at Table 21 feel comfortable and not imposed on by people waiting in line for the Tap Room or walking to the patio. As mentioned last week, we will be tapping Block 15's first cider this Friday! In addition to the arrival of Fresh Press, we are also announcing our wine license to the public, under the name BLOCK 15 CELLARS. Take a sneak peek at the images and statement we will be releasing in the coming days.
“This summer, we expanded our operations licensing and are excited to announce BLOCK 15 CELLARS—where we will explore alternative modes of fermentation, and widen the breadth of our artistic line of offerings while evolving as creators! Through the lens of a brewer, we have been working with a bounty of grapes and fruits that the Willamette Valley and PNW provides us. The results are a creation of unique wines and ciders that remain distinctly and absolutely Block 15. Shortly, we will be releasing our first of a series of hard ciders. And with time, wines from this year’s harvest alongside the creative hop-forward ales, crisp lagers, and barrel aged rarities you have come to expect from us.”

Raspberry Cardinal Coalescence // Flanders-Style Red Ale with Raspberries // Inspired by the classically tart and delightfully complex red ales from the Flemish region of Belgium, Cardinal Coalescence blends fresh red ale with portions of mature brandy barrel-aged ale from our wild cellar. Extended conditioning in our oak foeders allowed this blend to develop wonderfully balanced notes of pie cherries, caramel, and dried fruit character alongside a complex acidity. We then reserved a small portion of cardinal coalescence to further mature with Oregon-grown raspberries. // 6.1% ABV // $11.50 / 500mL bottle

We’ll have a new gluten-free IPA from Evasion Brewing out of McMinnville, OR!
Hophoria IPA // 6.1% // A well balanced IPA made with a blend of Citra and Mosaic hops that provide an experience of flavors and aromas from oranges and blueberries to stonefruit. It has an assertive, hoppy finish that is short-lived.
Ingredients: Water, Millet, Rice, Buckwheat, Oats, Hops, and Yeast
We will be opening cans of this at shift change on Friday, Saturday and Sunday for those of you that want to swing by and sample it.

We’ve officially 86’d 2Towns draft cider until the release of Fresh Press on Friday, so for the time being we have 2Towns cans only! They will be $5/can, and we have three types. They are all in computer accurately, and when serving, open the can and give them can and glass. We will continue to offer cans even when Fresh Press goes on draft so we can offer additional flavors/styles of cider to folks who want it!
Check propane tanks often, they run out quickly and it's a bummer to have to change them mid-rush!

Tap Talks will be relaunching starting in November in a virtual, social distanced manner! For November’s Tap Talk, we’ll be coinciding it with our Tap Room Dine-Out for 500 Women Scientists!
The in-house dine-out will take place as it would normally at the Tap Room, however, for this dine-out we will be including take-out and delivery sales from downtown as well. The point of this is to be able to encourage guests to enjoy Block 15 food from the comfort of their own home while also enjoying the virtual Tap Talk! We will be giving out a little info card with every delivery/to-go order with the link to the Tap Talk Zoom invite, as well as information on the Dine-Out.
We will NOT be showing a presentation of the Tap Talk at any of our locations, FYI!

Blacklight // Black Lager // Blacklight Lager, formerly known as Black Gold, is our yearly autumnal schwarzbier, releasing this Saturday! Designed in cooperation with OSU’s fermentation science program, this black lager was brewed with specialty dark malts and gently hopped with German hops. Extended cold conditioning rounded out its sharper roast character, producing a smooth and refreshing dark beer offering notes of toasted nuts, dark chocolate, and dried fruit. // 5.25% ABV // $2.75 / 16 oz can, plus deposit
Turbulent Consequence, Duivels Bier // Spontaneously Fermented Dark Lambic-Style Ale // Dropping this Saturday, Turbulence Consequence, Duivels Bier! Duivels Bier is our interpretation of a unique historical style. A specially designed Turbulent Consequence base, aged 30 months in oak barrels, delivers us this sinfully satisfying, dark, lambic-style ale—layered with notes of vanilla, dried fruit, caramel and big time barrel character from it’s 2.5 year slumber. Turbulent Consequence is brewed using classic lambic methods from the Senne River Valley in Belgium. A multi-step turbid mash, inoculation with resident flora in our wild cellar’s coolship, spontaneous fermentation and extended maturation in oak barrels create this devilishly delightful beer. Mature barrels are then used in various blends throughout the year. At nearly 9% it is sinfully easy to drink, and you would swear that the devil was in the bottle. // 8.7% ABV // $11.50 / 500mL bottle

CASA’S SHOP SMALL, HELP BIG FUNDRAISER
CASA - Voices for Children is a non-profit organization working with foster children in Corvallis. They are Court Appointed Special Advocates, and their mission is to provide advocacy for 100% of abused and neglected children with open dependency cases within Benton County. CASA is a unique program; there are no other agencies or nonprofit organizations that provide advocacy on behalf of children in foster care. CASA is built on the foundation of everyday people contributing to make a difference in an abused child’s life.
Due to Covid-19 and the difficult year they have experienced as a community, they have decided to try a new "Shop Small, Help BIG" fundraiser this fall:
They are asking community members to purchase gift cards or certificates to their favorite local business and donate them to CASA. The cards and certificates will be gathered and auctioned live on our website or platform in the first week of December.
Our staff doesn’t have to do anything other than sell gift cards and the rest is handled by CASA! So it is a super easy, great way to support this organization. If you do have any questions, though, please reach out to Katy or Paige.

LATE FALL BOTTLE RELEASE
We will be doing a modified version of our Late Fall Bottle Release on Saturday, November 7th! This release will include Figgy Pudding, the always highly-anticipated release of Imagine, and the special 2020 variation, Imagine, Belgian Waffle. Each year we take a blend of Belgian-inspired imperial stouts, matured for one to two years in freshly-emptied bourbon barrels for the base, and then reserve a small portion to be conditioned with select ingredients to be released as a limited variation—this year being hot liege waffles and fresh maple syrup.
A quick, but important, heads up—this year’s release will be run just a bit different than in the past. For 2020 you will have THREE different options to procure an allotment of release bottles:
First is our yearly brunch, by reservation only, secured through our newsletter brunch lottery. This year’s brunch will be at the Pub and the Tap Room (Caves will just have public brunch as if it’s a normal Saturday). This lottery is currently open and accepting entrants, and will close this coming Tuesday.
Second, we are offering these releases via our Saturday Drive-Thru sale. The store for this will open as normal, on the Tuesday before the release (November 3rd). This will be done as all other Saturday Drive-Thru sales are done, so nothing new or special!
Third, we will offer ordering UPS delivery to Oregon addresses! Items on the UPS store will go live on Tuesday, November 3rd with fulfillment happening on Thursday, November 5th for delivery on Friday, November 6th.
We’ll provide more details as the event gets closer, in addition to more details provided to folks working at respective locations during the release!
FRESH PRESS CIDER
We’re super excited to announce that we’re making cider! The brew team has been hard at work developing this amazing new addition to the Block 15 lineup. Our first offering is called Fresh Press, a crisp, unfiltered style using sweet Fuji and tart Granny Smith apples.
Fresh Press will be on tap at both Pub and Tap Room locations in the coming weeks, with canned product in the near future!
More details regarding pricing, what it’s replacing, and additional logistics will be relayed as we get closer to a release date.

This is the last week to order your custom Block 15 Crew apparel. We’re looking forward to seeing everyone rep their gear in their own style!

The DAB Lab, Full Melt // Blazey IPA // The latest iteration of our DAB Lab series drops this Saturday! Full Melt is a sticky, tropical 1-2-3 using Citra Cryo, Ekuanot Incognito and Simcoe Co2 extract. We’re pretty stoked to add this dank, hazy addition to our DAB Lab family of beers that explore different hop extraction techniques. // 7% ABV // $4.50 / 16 oz can, plus deposit
Såjhon // Mixed-culture Saison // Mixed-culture fans rejoice! Såjhon is releasing this Saturday alongside The DAB Lab, Full Melt. Såjhon is a rustic farmhouse ale, blending classic Saison yeast and Brettanomyces. Mild funk and delicate acidity support notes of fresh hay and countryside flowers from a duo of noble German hops. A robust grist profile of both rye malt and flaked corn lend dryness and rustic earthiness to the finish. // 4.8% ABV // $11.50 / 500mL bottle

The OLCC has extended the authorization to accept expired Oregon IDs through the end of the year, so please FOH’ers be aware of this as we’re checking IDs!
DOWNTOWN UPDATES
Fall cocktails have officially launched! They are as listed below:
Chai Painkiller // Chai tea infused silver rum, coconut cream, pineapple & orange juices.
Currant Mood // Buffalo Trace bourbon, Clear Creek Cassis liqueur, lemon juice, honey, Q Ginger Beer.
The Pollinator // Crater Lake Gin, honey-sage-ginger simple syrup, and lemon juice.
Hot Spiked Cider // Applejack Brandy, Tuaca, and hot apple cider.
**Also, our seasonal fruit lemonade flavor has changed from Passionfruit to Black Currant-Blackberry.
We are shifting our closing server schedules. We now have a "1st off" and "2nd off" closer with the "1st off" being responsible for the upstairs closing duties.
Mug Club shirts & mugs, as well as Bourbon Month Passport shirts, are all now all available for pick-up. Members and Passport completers have been given a few different options as to how they would like to receive their swag, so Pub servers may have some members ask if they can pick up their items. Servers should check in with the manager on duty who will then be able to grab shirts/mugs for the guest.
TAP ROOM UPDATES
We’re pushing back the new menu here at the Tap Room until next Tuesday, October 20th due to some mechanical delays!
Starting once the current 2Towns cider runs out on draft, we will transition to Wandering Aengus as our draft cider for the time being (until our own cider, Fresh Press, goes live)!
TAKE-OUT/DELIVERY UPDATES
On Monday, Chris discovered a change in the online system when it comes to gift card usage. Turns out that as of August 1st, Square changed its fee structure for deliveries and they no longer accept Gift Cards for delivery orders! BOO!!!!
With this knowledge, there are 2 options:
If the guest has not cleared their shopping cart for their order through the website: Tell the guest they can put through the order as a take-out order, and enter their address and phone number in the final section of “notes to seller.” This will still allow them to use their card, and send the order through the system.
If their preference is to do the order over the phone: Please take their order, and get their address and phone number. Based on which gift card they are using, please use either the POS or Square gift card number Either option you go with, please make sure to check with the take out/delivery team to give an accurate projection of the delivery time for their order.

CASA’S SHOP SMALL, HELP BIG FUNDRAISER
CASA - Voices for Children is a non-profit organization working with foster children in Corvallis. They are Court Appointed Special Advocates, and their mission is to provide advocacy for 100% of abused and neglected children with open dependency cases within Benton County. CASA is a unique program; there are no other agencies or nonprofit organizations that provide advocacy on behalf of children in foster care. CASA is built on the foundation of everyday people contributing to make a difference in an abused child’s life.
Due to Covid-19 and the difficult year they have experienced as a community, they have decided to try a new "Shop Small, Help BIG" fundraiser this fall:
They are asking community members to purchase gift cards or certificates to their favorite local business and donate them to CASA. The cards and certificates will be gathered and auctioned live on our website or platform in the first week of December.
Our staff doesn’t have to do anything other than sell gift cards and the rest is handled by CASA! So it is a super easy, great way to support this organization. If you do have any questions, though, please reach out to Katy or Paige.
