GENERAL

Here is a quick reminder of our Dress Code policy.  Make sure we are showing up to our shifts looking professional, put together, and ready to work (not looking like we came from the gym or other casual activity).  You’re all beautiful and have great style!

DRESS CODE

The goal of Block 15’s dress code is to promote a professional appearance that represents the Block15 brand and standard of excellence. Individualism is an important aspect of the Block 15 culture, and we encourage stylistic expression within a set of guidelines designed to present a polished, professional team, with each member remaining easily identifiable as employees of the company.

● Employee attire must be properly well-fitting, presentable, professional, family-friendly, & clean. Also, clothing must be free of prominent logos from other brands. Any questions of following the above are reviewed by the FOH manager on duty.

● A Block 15 logo or graphic must be prominently displayed on top/outer layers of clothing. Those items can include buttons, apron, shirt, sweatshirt, hat or other Block 15 branded items.

● Some positions may have more specific restrictions intended to protect the employee from potential job-related hazards.

MENU UPDATE

  • Mixed Berry Pavlova-House baked meringue shell served with lemon curd, mixed Willamette Valley berries, and freshly whipped cream. $8

  • Pavlova is a dessert consisting of a meringue base or shell filled with whipped cream and fruit. Ours has the addition of fresh lemon curd, which is a sweet and tart thickened sauce or preserves made from lemons, sugar, butter, and eggs.

  • Our pavlova is gluten-free!

  • A meringue is made from whipped egg whites and sugar that is formed into a shell and baked until just crisp. It should have a light and crisp exterior with a slightly gooey, marshmallowy center.

  • These photos feature just strawberries because that is all I had at testing! Ours will be a mix of strawberries, blueberries, and blackberries.

PUB UPDATES

  • As mentioned on the Read & Sign and FOH focus point this week–we are aiming to be extra mindful of the times that we are behind the bar. Help is always, always appreciated, but it is a tight and fast paced working area that can get crowded quickly. We absolutely appreciate and welcome all of the help and teamwork, and just want to make being behind the bar smooth for everyone! Below are a couple of key takeaways:

    • When coming behind the bar, please be mindful of how many other people are currently working behind the bar. If there are two people in the beer pouring area, it becomes very tight and hard to move around with a third. Focusing on helping folks in the BZero area is a great way to help out if it looks like they haven’t been greeted yet.

    • If you see a bartender talking to a guest, please wait until they are done (or gently get their attention if it’s urgent) before passing along info or asking a question. We want to be respectful of our interactions with guests at the bar.

    • If you are clocking in, working on a beer restock, or popping in at the end of the bar, please tuck to one side of the bar. Often, folks will need to get down to the BZero/B1 area to help take care of guests and may struggle to get to that end if the aisle is clogged up.

TAP ROOM UPDATES

  • We are focusing on brewery safety this week.  Make sure that we are not walking through the brewery when they are actively brewing unless you have gotten the OK from a brewer.

  • Next Tuesday, August 30th, we will be holding an event at the Tap Room for the Corvallis Young Professionals Association.  25% of all beer sales for the day will be donated to Jackson Street Youth Services.  Come show your love and support for this awesome cause!

GENERAL

  • Pavlova is coming BACK! We will replace the coconut panna cotta with our Berry Pavlova on Friday 8/26!

  • Mixed Berry Pavlova-House baked meringue shell served with lemon curd, mixed Willamette Valley berries, and freshly whipped cream. $8

PUB UPDATES

  • This is a reminder to please place beer menus (1 for every 2 people that can be seated, laid down in an “X” formation) on a table when you are done cleaning it. This indicates to the hosts, floats, or other servers that the table is clean and ready to be sat. Please make sure that the upstairs server station and back server station have a stack of menus for easy access when resetting tables.

  • Closing Servers - We’ve seen some funky ghost tickets from previous days come in occasionally and we think the culprit might be handhelds that have not resynced before the end of the day. As part of your closing duties, please login to each handheld before you place it on the charging dock to ensure that it syncs back up with the main system. The bar manager will be in charge of syncing the handhelds charging at the bar.

TAP ROOM UPDATES

  • Chicken wings are back in stock to run Friday, Saturday and Sundays at the taproom! The wings we are getting in are quite voluptuous, so we are going to go back to a count version this Friday. There will be options for 3, 6, 9 or 12 wings. If folks want to do different sauces, please ring them in separately. For instance, if someone wants 12 wings, but 6 tossed in Carolina gold and 6 tossed in wing sauce, ring them in as 2 separate orders of 6 and special instruct to plate them together!

PUB UPDATES

  • Hosts -  For parties of 8 or more, we are asking that half of the group is here before we seat them. To ensure that we are providing a great experience for our guests and communicating properly, please inform guests of this policy as you are placing them on the waitlist. You can use the following verbiage (or something along these lines with a warm and friendly smile/tone) “For parties of 8 or more, we ask that half of your party is here before we seat you. We will get you on the waitlist and start preparing your table in the meantime. If you would like to have a drink while you wait, we would be happy to help you at the bar.” This will help to control the flow in the kitchen and on the floor better and ultimately provide a more seamless experience for our guests!

  • Our sparkling wine pour will be switching from the small Lovo Prosecco bottles to the Acinum Extra Dry Prosecco (same wine that we use in the Sparkle Motion). This is an Italian Proscecco with stone fruit and honeysuckle aromas lead the nose. The simple off-dry palate doles out green apple, peach and candied citrus peel. It's fresh and simple with bright acidity.

  • Raspberry + Meyer Lemon SeekOut has been replaced by Blackberry + Kiwi for the season.

TAP ROOM UPDATES

  • New phones should be here Wednesday!

  • We are working on getting new Toast handhelds/fixing the ones that aren’t working. In the meantime please ensure they are charging when you plug them in - it may take some wiggling of the charger to make them work.

PUB UPDATES

  • We are no longer wiping menus down after every use. Instead, all menus will be sanitized twice a day as part of the Host side work & shift change (once by the AM Host at 4pm and again by the PM Host after they have been phased). It will be super important for us all (bartenders, hosts, servers, food runners) to double check the cleanliness of menus before putting them back into rotation or before handing them off to customers. No one likes random food in their menus! Servers, feel free to keep a stack of beer menus at the upstairs and back server stations to put back on tables once they have been cleaned–this is how we let our hosts know that a table is clean and ready to be sat again.

  • On the topic of lists–here is a quick reminder to make sure that all lists and side work have been completed or delegated before clocking off. Items should be initialized when they have been completed, rather than just checked off. A lot of time has been put into creating these lists to help share the work and duties, so take care of your coworkers by ensuring that these are complete. Lack of completion or not signing off on items could lead to a write-up (but no one wants that to happen!).

TAP ROOM UPDATES

  • Second Tunes Brews and BBQ tomorrow! If you’re not working, come down to the Tap Room to eat, drink and jam!

    THURSDAY 7/14

Releasing Friday, 7/8

The DAB Lab, Hop Hash: India Pale Ale// In addition to Mosaic CO2 extract and Citra hops, Hop Hash features a heady blast of Simcoe lupulin powder - a cryogenic concentration of resin and oils from whole hop flowers. • Takeaways:

  • Like fresh squeezed Juice, or a medely of jolly ranchers.

  • Papaya. Limoncello. Nectar. Delicately sweet, waves of citrus coat the palate with a bright tropical punch. Moderate bitterness balances well with this juice-forward IPA.

Alchemize: India Pale Ale// When a top innovating company in the HOP industry drops an experimental new product on your doorstep, you jump at the opportunity to use it! Brewed with a new YCH hop product that combines Citra, Simcoe, Mosaic and Phantasm powder into one package, this thiolized west-coast IPA showcases the research and forward-thinking happenings in the hop industry.// 7.00% ABV

Wandelpad: Belgian - Style Blonde Ale// Inspired by one of the finest Trappist beers we sampled in our travels through Belgium, this blonde ale was brewed with imported Belgian malts, Oregon-grown hops, and Trappist yeast. Crisp, complex, and refreshing, the result is a classic Belgian balance of fruity esters, rustic grist character, and a zesty hop finish.// 7.00% ABV

  • Takeaways:

  • Made with Traditional ingredients and naturally conditioned.

  • Honey. Spice. Velvety. Aromas of honey and straw play with a subtle spice and fuityness that balances with a delicate bitterness. Very refreshing.

TUNES, BREWS & BBQ IS BACK!

Starting next Thursday, July 7th, we’ll be bringing back Tunes, Brews, & BBQ!

For those of you who don’t know, T,B,BBQ is an event that we have been hosting at Block 15 almost every summer since 2009 where we have live music, delicious BBQ and of course, amazing beer in the sunshine!  Originally, we held these at the pub, but have switched over to the Tap Room because who doesn’t want to listen to live music with that view?!? These have historically been every Wednesday in July, but we are switching it to Thursdays this year.

Each band will be playing two 1 hour sets each Thursday from 6-7 and 7:30-8:30.  BBQ specials will go live starting at 5:30.

Unlike last year, we will not be taking any reservations this year for the Tunes.  It will be first come, first serve and we will spread the tables out in the landscaped area with room for people to bring blankets/chairs to sit on the grass and jam out! Tables will probably fill up fast so bring a blanket or chair just in case!

Invite the homies or family by sharing our Facebook event!

2022 Lineup

THURSDAY, 7/7

  • Tunes - DRTR - Blues Americana

  • BBQ - Chipotle Tri Tip Sandwich with Macaroni Salad

THURSDAY 7/14

  • Tunes - The Brutal Bridges Band - Rump-spanking alt-punk-funk-icana

  • BBQ - Alabama Smoked Chicken Hindquarters with Picnic Potato Salad, Pickled Market Vegetables and Cornbread

THURSDAY 7/21

  • Tunes - The Flat Stanley Incident - Eclectic Americana

  • BBQ - Brisket Burnt Ends with House Carolina Style Slaw, Baked Mac N Cheese, and Texas Toast

THURSDAY 7/28

  • Tunes - Space Neighbors - Retro Future Classics

  • BBQ - Cherry Chipotle Brisket Sandwich with Street Corn

GENERAL

  • When clocking in, the goal is to be completely ready to start your shift (proper shoes and attire, hair pulled back, apron on). Time clocked on should be spent readying yourself for your shift (soups/specials, new beers, 86’d items, new or updated line procedures, etc.), but not putting belongings away or changing clothes. Same goes for clocking out–please be sure to clock out before going downstairs to change shoes/clothes or grab personal belongings.

  • We will be closing at 8pm (last seating, 7pm) at both locations on Monday, July 4th!

PUB UPDATES

  • To expand on the Front of House focus point this week: In order to set our co-workers up for success, we would like to focus on more thorough communication between Hosts and Servers!

    • Servers: please check in with the host frequently throughout your shift to let them know what tables are cashed out, which tables need to be bussed or wiped, and which tables are clean and ready to be sat. Often we only have one host on, so checking in often will help with their flow and planning when it comes to seating and quoting wait times.

    • Hosts: when you have a slow moment, remember to take a loop through the restaurant to make sure that the host map is up to date. Doing this often in combination with the servers updating you all will give you a great idea of the overall big picture of the restaurant and its flow. When there are two hosts scheduled, make sure you establish who is the person at the stand quoting times, and who is the “runner” (cleans tables, makes the laps, seats guests).

    1. We are making some bar changes this Friday, July 1st!

      • Pacific Pineapple will be replaced by the Sun’s Out Saison from 2 Towns Ciderhouse. Sun’s Out is a Peach Saison Cider made with a french saison yeast (gives the cider some farmhouse, spice, and light pepper notes which compliment the peach nicely). Prickly Pearadise will eventually be replaced with Cherry Sublime (red sour cherry-lime cider), but that is still a week or two out.

      • Guava-White Peach lemonade will be replaced by Passionfuit-Mango

      • Peachy Keen will be staying for most of the summer, and we will add a Passionfruit-Mango Margarita to the menu this Friday (July 1st)

TAP ROOM UPDATES

  • Tunes Brews & BBQ Menu!

    • We are so excited for this years Tunes, Brews & BBQ at the taproom this year! Please check out the different specials we will be offering each week. I will also send out a detailed description to you all a few days in advance so you can get folks super psyched for some killer BBQ!

    • 7/7 ChipotleTri Tip Sandwich-Chipotle marinated tri tip sliced thinly on a house baked roll with local greens, tomato, chipotle aioli and sharp white cheddar cheese. Served with house mac salad.

    • 7/14 Alabama Smoked Chicken Hindquarters w/ Alabama Horseradish BBQ sauce, picnic potato salad, house pickled market vegetables and freshly baked cornbread.

    • 7/21-Brisket Burnt Ends w/ Texas BBQ sauce, house slaw, baked mac and cheese, and Texas toast.

    • 7/28-Cherry Chipotle brisket sandwich-Tender smoked brisket with cherry chipotle BBQ sauce on a house Texas Toast, served with Elotes street corn on the cob.

PINK BOOTS CHAPTER - MESSAGE FROM J

Hello!

Are you female-identified and/or non-binary and interested in building community (and your career) in the fermented and alcoholic beverage industry?

I'm starting a Corvallis Pink Boots chapter and would love to invite you to a Q&A meet up on Saturday, July 9th in the Tap Room Barrel Room to talk about how membership in Pink Boots can do both.

 Some important points:

  •  You must be currently employed in the industry, earning at least 25% of your income from the industry. Don't worry -- Students planning on entering the field are welcome, too.

  • Any and all positions in the industry are welcome: Production, Packaging, Front of House, Back of House, Design, Ownership, Students, etc.

  • Pink Boots is more than just beer! It can also include wine, cider, mead, distilling, or any other profession directly related to the alcohol industry.

I'd love to see you all on the 9th to talk about this and all the amazing educational opportunities, scholarships, events, and more that we can participate in as a part of Pink Boots.

Best,

J

PUB UPDATES

  • AM Hosts - Now that we are finally into some real summer weather, please make sure that the 4 large outdoor planters get watered with ½-¾ of a bucket of water (each) in the morning! These planters are not on the drip system and need to be watered daily to keep them looking beautiful. When watering, gently pour the water over the entire planter to evenly distribute across the soil and help prevent the soil from getting washed out.

  • We launched a new cocktail on Tuesday–Zigazig Ah! (if you aren’t familiar with the name, go listen to Wannabe by The Spice Girls). It’s a variation on a Mai Tai with a pistachio orgeat and a guava-ginger-lime foam. For bartenders: the build of the cocktail is the same as the previous Mai Tai. Also, the foam can be a little supercharged, so go slowly when finishing the cocktail.

  • The half umbrella at 605 has been falling over with the wind. Due to 605 being a small table, we are not able to drill a hole through it to hold the umbrella. Please do not bring out the ½ umbrella. This will mean that 605 is not shaded and is fully in the sun, so please make sure that guests are okay with the extra sunshine before seating them there.

TAP ROOM UPDATES

  • As you have probably noticed, we have all of our new hanging baskets up!  All of these are on an automatic drip system and don’t need to be watered.  The only 3 that do are the ones hanging out on the front patio area.  Hosts, please grab the small ladder from inside and water them with a pitcher once a day.

We are no longer taking any reservations(large or not) on Fridays, Saturdays and Sundays.  We are also switching the email address for parties 12 and up on Mon-Thurs to Taproom@block15 instead of Sean@block15.

UPCOMING PACKAGED RELEASES

Releasing Friday, 6/17

Farmhand Select: Farmhouse Ale// Brewed alongside our friends at Upright Brewing, this farmhouse ale showcases McKenzie hops from nearby Oregon Hop House and a malt bill featuring Francin Pilsner (Trico Farm), Lyon Light Munich (Horlacher Farm) and Oat Pale (Newhouse Farm). These regionally sourced products have created gentle aromas of bartlett pear, kumquat, ginger and clove. This year's entry in a series dedicated to brewing with region as the central focus.// 5.70% ABV

  • Takeaways:

A killer farmhouse brewed with only regional ingredients and made with our friends at Upright Brewing. Make a saison, then can it. I'm not going to lie, I never get tired of farmhouse ale, especially refreshingly dry farmhouse with pleasant hop bite on a warm summer day. Crushable.

DRAFT ONLY RELEASE

Western Waters: India Pale Ale// Brewed with the good waters of our home state, Oregon, Western Waters is an expression of what clean water sources mean to us. This experimental West Coast IPA was created by adding an enzyme to extract more flavor from the thiols in our hops. Boasting with notes of Orange zest, mango, and cannabis, this IPA delivers some serious hop-driven flavor.

Experimentation is an integral part of the brewing process, and with clean sources, we can push our trials and experimentation. We are always willing to try something new to learn how to make a better product. // 6.90% ABV

  • Takeaways:

We're trying a new technique for releasing thiols in this one. It'a killer west coast featuring idaho7, ekuanaut incognito, Mosaic and simcoe, but then we're amping up the flavor by releasing those bound thiols during fermentation. Unlike other thiolized beers, we are not using a GMO yeast, but a commercially available enzyme that is used in wine making to get that passionfruit to really pop in sav blanc.

EVENTS

Ocean Blue & Block 15 Beach Clean Up!

When: June 18th at 10 am

Where: Nye Beach Turn Around (Newport)

Who: You’re invited!

Why: Because we love our ocean!

Come out to the coast on a (hopfeully) Sunny day and make a BIG impact to the land and ocean community! We’ve joined Ocean Blue Projects for The People’s Pint, but we wanted to take it a step further and help raise awareness for microplastics on our shorelines!

HAPPY WORLD’S OCEAN DAY!

You will see these posters at your locations today! This is a good talking point for guests if they ask us what we use! We’re proud to be using non plastic straws at both locations (Agave straws).

PUB UPDATES

  • We will be switching to the 3 Fools Tempranillo this Friday, June 17th. This will replace the Grenache, and is a nice, light-bodied red that pairs well with all types of dishes. If you are over 21, feel free to check in with a bartender to get a sample of the new wine.

  • The baskets in the Corral and the hanging baskets above the 100’s are officially on the drip system! Please continue watering the large barrel by the 100’s and the planters on 3rd each morning since these are not on the drip system.

  • Some helpful tips and tricks for keeping the beer walk-in organized are posted on the outside of the cooler. Please take a look at these tips and let a manager know if you have any questions. One of the most important pieces of information is to keep beer flats each in their own stack (don’t put a Fluffhead flat on top of a stack of Sticky flats) and please do not make mixed flats with single 4-packs that are left over–these singled out 4-packs can live on top of their same stack (2 4-Packs of Fluffhead can be placed on top of the stack of Fluffhead). Thank you for helping to keep our cooler and inventory neat and organized.

TAP ROOM UPDATES

  • We have a new outdoor water station! This should be emptied and brought in every night at close to be refilled in the morning.

  • We have also brought back the outdoor host stand and bus station.  The bus bins should be brought in/sent to the dish pit every night, wipe down the cart, and then collect all the host stuff (Ipads, menus, etc) and put it on the cart inside.  Thanks! Hooray for nice weather!

UPCOMING PACKAGED RELEASES

Releasing Friday, 6/10

The Incredible: Imperial Double India Pale Ale// A preposterously smooth Triple IPA, The Incredible is brewed with a duo of pale and pilsner malts, balanced by a bounty of our favorite hop varietals. What makes this beer truly incredible? Its undeniably approachable notes of melon, lime, and grapefruit floating above an unobtrusive supporting malt and crisp finish. // 10.50% ABV

  • Takeaways:

We're pushing the envelope in hop flavor and alcohol to create a balanced and deceptively drinkable triple IPA. It should be smooth but fully loaded with huge hop character.

Liberty and Justice for All: India Pale Ale// As many Americans celebrate their freedom on independence day, many others face inequalities that makes true freedom a yet unrealized dream. We stand united with our underserved brothers and sisters, and commit ourselves to the hard work of making liberty and justice a reality for all Americans. This year, a portion of the proceeds from this beer will be donated to Disability Rights Oregon (dro) as they work to promote and defend the rights of persons with disabilities to have equality of opportunity, full participation, and the ability to exercise meaningful choice. // 7.00% ABV

  • Takeaways:

This West coast IPA features Columbus, Centennial, Citra incognito, Simcoe, Chinook, Amarillo and Azacca hops. Liberty and Justice for all is brewed to help raise awareness for disability rights and equal opportunity.

  • Flower baskets will be delivered on Thursday, June 9th! Again, the baskets hanging above the 100’s tables will have an automatic watering system to take care of them, but the baskets in the Corral will need to be hand watered for at least a week until the drip system gets extended. GENERAL

Wine prices on the menu will be raising a smidge this upcoming Friday to adjust for costs but also remain competitive and have great value alongside other Corvallis restaurants.

The new Mug Club year officially started on Wednesday, June 1st! Just a reminder, all Mug Club members get their first pint in the new Mug Club year on the house. Please check in with members to see if they have used this perk over the next few weeks, and be sure to discount the beer using the “Mug Club Free Beer” discount button, and log the discount being used on the “Mug Club Free Beer” sheet behind the Pub and Tap Room bars. If you have any questions, feel free to reach out to Goody!

TAP ROOM UPDATES

  • Wine things! On Friday, we will be switching up our pinot gris to Sweet Cheeks!  We will also have new wine glasses on Friday and all wine will go in those instead of tulip glasses.  Finally, starting next Friday, we will have Airlie Rose in Bottles for the summer!

  • The tall Rotating Specials table tents are no more.  The new specials now live on the back side of the Table numbers.  Make sure we are still pointing these out to every guest as they are seated.

PUB UPDATES

  • New hanging baskets will be landing at the Pub this Thursday! The baskets hanging along the awning will be automatically watered using the timed drip system that we have installed, but the baskets on the barrels in the corral will need to be hand watered until we extend the drip system. Hosts - as part of your shift change watering, please make sure that each of these baskets gets one pitcher of water each day.

  • Heaters in the tent will be coming down this week to prepare for the tent top to also come down. If a guest wants a heated table, please direct them towards the 100’s.

  • Hosts - especially as we have some busy weekends coming up, remember to offer for each party waiting over 15 minutes to get a drink at the bar if they would like. Also, calling out names of parties when you have folks waiting in the lobby will help to get parties sat and tables full faster.

Alumni Club 2022

  • This weekend marks the 2nd release of Alumni Club, a collaboration beer between Block 15 and a graduate of Oregon State that has gone on to do amazing things in the craft beer industry. This year’s collaboration brewery is Heater Allen, out of McMinnville. Heater Allen produces some of the finest lagers in the country, so it seemed fitting to brew a Pre-Prohibition Style Lager with head brewer Lisa Allen and her father Rick. The Allen’s are 4th generation OSU grads, and are reopening their McMinnville Tap Room this weekend…perfect timing for a great beer drop!

Sternwheeler

  • Also releasing this weekend is Sternwheeler Hazy Pale Ale. We were contacted a few months ago by the Historic Butteville Store regarding a fundraising opportunity, and we jumped on it! The store is one of the oldest operating retail stores in the state, sitting along the Willamette River. It is also the location of the Oregon Hop House, an all-organic hop farm that contributed hops for this special beer. If you’re craving a freshly brewed hazy pale (proceeds of beer sales go towards their fundraising efforts) or some homemade ice cream, make your way up to Butteville to support a good cause!

EVENTS

UPCOMING PACKAGED RELEASES

Releasing Friday, 5/20

  • Island in the Sky: Hazy Imperial India Pale Ale// Loaded with Chinook, Cascade, Mosaic and Belma hops, Island in the Sky is a beautifully complex hazy IIPA. Featuring hop notes of blueberry and strawberry, this beer is piney and floral, reflecting the regional landscapes that inspired it.

    // 9.00% ABV / 16oz can

  • Nebula: Oat Stout// This American-Style out sout was brewed with rolled oats, English Maris Otter, and five different specialy dark malts, imparting rich and roasty notes of coffee, dark chocolate, and caramel that are softened by a smooth body and balanced finish.

    // 6.00% ABV / 16oz can

DRAFT RELEASES

Pear & Apple Cider: Spontaneous Cider// Crisp white apple flesh, pineapple, honey, mild vinous qualities, and a touch of oaky tannin from the barrel. Balanced acidity with a touch of sweetness to keep the dry from being puckering. Just a hint of spontaneous funk, but mostly a very clean drinking experience. This is a blend of pears and apples all sourced from independent Willamette Valley orchards. Spontaneous fermentation and maturation took place over two years in our cold cellar in neutral Willamette Valley Pinot Noir barrels. Cold fermented, this cider pours a hazy yellow gold and would pair well with anything from rich aged cheeses to summer salads.

TAP ROOM UPDATES

  • As the weather gets nicer, expect later rushes around the 7:00 hour.  In the next few weeks we will be extending our hours to stay open later so get ready for lots of sunsets!

  • This week, we are putting an extra emphasis on hospitality in the line.  When the line starts to build, and we have an available food runner/host, we want one of them to be jumping out with a handheld and blowing peoples minds with our hospitality game.  We can answer any questions, offer to grab tasters, or just ring in drinks/food and either offer to bring them to the table, or have them wait for the drink pourer to make them depending on what is ordered.  As soon as we work our way through the line, that person can jump back and help pour beers to get everything out.  We have played around with this a bit and it works super well and I know you all have the skills to make it happen!

PUB UPDATES

  • Last week we focused on pre-bussing tables (whether they are your own or someone else’s) and saw some great improvement! Keep up the good work in ensuring that our guests have a great and comfortable experience! This week, we would like to continue to be mindful of organization and cleanliness of areas visible to customers (mainly the back server station). Please help to keep clipboards, personal belongings, drink cups and extra aprons off of the main counter and stashed below to keep that area looking nice.

  • As you are resetting tables downstairs in the carpeted areas (or when there is some down time between rushes) please take a moment to hokey the floors for any large debris or other crumbs to keep things looking tidier.

UPCOMING PACKAGED RELEASES

Releasing Friday, 4/29

  • Trilateral Response: Dry-Hopped Wit Ale // Partnering with de Garde and Foreland breweries, we’re taking a classic wit that includes coriander and Seville orange peel, then amping it up with Nectaron and Wakatu hops from the southern hemisphere. The result is a dry, refreshing ale with intense citrus and tropical aroma, all balanced out with fruity yeast esters.

    // 5.10% ABV / 16oz can

  • Summer Knights: Kolsch // This German-style Kölsch beer blends a pilsner malt base with both the lightly fruity quality of an ale and the clean finish of a lager.

    // 5.00% ABV / 16oz can

  • Board Shorts Next Set: India Pale Ale // Brewed in memory of our dear friend and original bar manager, Seth. Next Set represents his bright and easy-going spirit, like rocking a pair of colorful board shorts and drinking a summer IPA that captures the taste of the season with notes of tropical and citrus fruits. A portion of beer sales will be donated in his honor to the OHSU Brain Institute to aid in the discovery of treatments and eventual cure for brain cancer.

    // 6.50% ABV / 16oz can

COLLAB RELEASES

Magic Lanterns: India Pale Ale // When we received our order of Phantasm, we pondered the best way to use this intriguing ingredient. Immediately, our friends at Block15 came to mind. Wizards in the hop game, they were excited to join us in the challenge of highlighting this delicate, yet complex ingredient. Mutual passion, hefty amounts of thiol loaded Phantasm, very strategically placed hop additions and the use of a special yeast brought to life this delicious and intriguing IPA concept. Loaded full of rich citrus and vinous character with a touch of tropical wonder, this IPA is a unique expression of elements you wont want to miss.

PUB UPDATES

  • New Airlie Rosé of Pinot Noir is officially good to go! This will replace the Left Coast Rosé and will run through the rest of spring and likely a bit into summer before we switch to another rosé. This one also spends a little extra time on the grape skins which give it the deeper color and richer body (not a light or bright pink like a lot of other rosés). See below for some tasting notes:

    • Airlie Winery 2021 Rosé of Pinot Noir 12.5%

    • Located in Monmouth, OR

    • Deliciously dry, this lively rosé has notes of cranberry, pie cherry and raspberry.  Extended skin contact provided a rich color and medium body.

  • We will be running a Blood Orange Spritz this weekend with some Blood Orange Puree, lemon, Amrita sparkling wine and a touch of Aperol for bitterness and balance. This will start Friday and run through Sunday (or until we sell out).

Internal Brewsletter - April 13, 2022

UPCOMING PACKAGED RELEASES

Releasing Friday, 4/15

  • Maltster Series, Linc Malt: English Porter // Featuring classic English malts for support, with a backbone of regionally sourced and processed malts to resemble familiar ingredients true to it’s classic style. This English-style porter balances a medium bitterness and finish, highlighting malt character of chocolate, toffee and subtle coffee notes. The result is a very balanced and highly drinkable beer.

    // 5.40% ABV / 16oz can

  • Selection Series, Mosaic: India Pale Ale // This IPA was brewed exclusively with Mosaic hops from Oasis Farms in Prosser, Washington. With an unobtrusive grist profile and soft water base as the canvas, this beer is meant for Mosaic's vibrant notes of berries, orange zest, peaches, tangerine, mango, and a touch of dankness.

    // 7.00% ABV / 16oz can

  • Turbulent Consequence, 14: Dry Hopped Spontaneously Fermented Ale // Turbulent Consequence: 14, our anniversary ale, blends barrels matured for one, two, and three years in our wild cellar, then dry-hopped with a combination of Hallertau Blanc and Nelson Sauvin hops.

    // 5.80% ABV / 750 mL bottle

MENU CHANGES

New Dessert Alert! As we welcome spring, we will be switching to a carrot cake bell from the LP version at both locations! We will run this baby starting Monday 4/18 until mid May, which then we will switch back to the lp version until summer!

  • Carrot Cake Bell-Decadent carrot cake with a fluffy cream cheese filling. This update to a childhood classic is then topped with a classic swirl and toasted & crushed walnut. $8

  • Based on our feedback from this week, we will be keeping the Portland buns around as a vegan bun option! We will also continue to use these buns for our croutons to ensure we are rolling through the buns quick enough to keep them freshy fresh! I have added a Sub Vegan Bun option to burger mods and the SUB food mods.

TAP ROOM UPDATES

Starting Wednesday, we will be adding 3 more bar stools to the other end of the bar! These will be B6-B8.  With this, The water station will be moving over under the Specials board and the end of the bar will no longer be a place for dirty dishes/glasses.  There will be some playing around with it until we get it where we want, so be patient and remember to give these extra folks just as much attention if not more than you would give any other customer.

  • As the weather gets nicer and we get busier and busier, we will have more and more kids running around and being wild.  Please review the “How to Chat with Parents that don’t Parent” sheet that is posted by both white boards.

PUB UPDATES

  • Just a reminder that plant watering for the outside plants will be on the Host/Food Runner shift change and side work list. As a daytime host, it will be your duty to ensure that all the three planters on 3rd street in front of the Pub and the one planter in front of Caves get watered properly (4-5 pitchers of water each).

  • When resetting tables, please do so in an organized fashion to help everything look clean and cohesive. Inside tables should have the table tent at the far end of the table (or in the middle of its two tables pushed together like table 10 or 25/26) with the salt and pepper shakers in front and the chalk cup to the side of the table tent. Each inside table should also get one beer menu for every two people that can sit at the table. This is our way to indicate to other servers and staff that the table is clean and ready to be sat. We now have more menus, so this should be happening every single time (upstairs servers, feel free to keep a clean stack at the server station to reset your own tables). Outside tables should have the table tent at the far end of the table and the “Please see inside staff for seating” tent at the other end. While it is damp and rainy outside, we don’t need to worry about putting beer menus immediately on these tables, but will do so as the weather gets better.

  • Hosts - When adding folks to the waitlist (if we are on more than a 15-minute wait) please remember to offer the group to grab a drink at the bar while they are waiting.

  • Closing Servers - Please wipe down the wall behind the ketchup pump nightly as part of your closing duties. The ketchup dries then becomes super glue on the wall that is very hard to remove.
