GENERAL UPDATES

  • Mug Club 2021

    • Starting on June 1st, the 2021/2022 Block 15 Mug Club begins! 125 lucky members have signed up to be a part of this special group, and we have some exciting new benefits to offer. Please read and review the benefits for this year to familiarize yourself with the updates.

    • New Mug Club 2021-2022 benefits:
      • In-house beer discounts are increasing to $0.50 off each beer, compared to your previous $0.25 discount.
      • Each member will receive a 2021 Mug Club enamel pin.
      • 10% retail merchandise and glassware.
      • Access to our new 2021 Mug Club online custom apparel store, with 100% of sales proceeds donated to the Oregon Brewshed Alliance (this custom apparel store will replace the standard t-shirts that we have offered in previous years).
      • Exclusive invitation to a future “Mug Club Social” event at our South Corvallis Tap Room.

  • National Burger Day!

    • Friday, May 28th is National Burger Day, and we’ll be running a burger special at both locations in honor of it! The burger will be a bone marrow burger with tomato confit! More details as well as pricing will be available on the pre-shift info boards as well as our special boards. This, depending on popularity and inventory, should run into the weekend as well!

  • Keg and Corni Sales

    • This week is the first week we’re not having a Saturday Drive-Thru sale, which per last week’s brewsletter, means the way folks can get cornis and kegs changed! You can now direct people to block15.com/kegs (or even just the main home page), and they can read up on the new procedure and place their order. The main gist of it is things will now be picked up on Fridays, and orders need to be in and finalized by Thursday at 5pm.

PUB UPDATES

  • Grain tubs from the brewery should live in the brewhouse when not in use. If you see them by the glass doors outside, please tuck them away.

  • We added another table to the 100's, so we now have 4 tables available on the sidewalk patio. Table maps and host maps have been updated!

  • There are now 3 barstools at the bar. These are first come, first served and are not able to be reserved ahead of time. They also have a 90-minute time limit, so please be sure to mention the limit as you seat or greet bar customers.

  • With increased capacity and adding additional tables outside, we have decided to add a third server in the mornings on through the weekend (Friday/Saturday/Sunday).

TAP ROOM UPDATES

  • The tent at the Tap Room has officially gone away, and we’ve moved those tables over to the north end of the Patio on to those super snazzy grass pavers! A large umbrella is inbound to shade some of that area, but just an FYI many of those tables will not be shaded throughout the day (this shouldn’t be a huge issue, as even the patio tables come 4/4:30ish start to be in the sun as well).

  • QR/counter ordering has officially commenced at the Tap Room. If you come in as a customer, try to use the system so you can give feedback and help us work out the kinks!

  • The two new tanks on the brewery floor (near the kitchen freezer) are a bit tighter in and closer to our walkway, so please be mindful to signage/roping off/etc. from the brewery when they are working with chemicals or hot water. Make sure you are staying aware and listening to them if they have caution.

SATURDAY DRIVE-THRU SALE UPDATE

This week is the last week of our Saturday Drive-Thru Sales! This has been an awesome program for the past year, however with restrictions loosening and people more willing to go out and about, the “contact free” aspect isn’t as necessary anymore. So, we’ll be shifting the two portions of the sale - packaged beer releases and keg/corni sales - a bit as follows:

Packaged Beer will now be releasing on Friday at both locations. Now customers can get beer to-go the same day of draft release, which will be really helpful for FOH staff as we can sell them beer to-go the day they taste it! Contact-free pickup can still be available via Toast online ordering by selecting “Curbside Pick-Up.” We will ensure that the new release buttons will be live and good to go by 8am on Friday mornings for folks to start “pre-ordering.”

Corni and Keg Sales will be done online via our Square store, which will always remain open with standards available all the time. New inventory items will be available in the store by 5pm on Mondays once we know what the weeks inventory looks like. Corni kegs will need to be dropped off by the customer by close of business on Thursday, and will be available to be picked up on Friday between noon and close of business. The main change here is that the filling and pick-up will be on Fridays now (not Saturdays). Kegs can be picked up on Friday between noon and close of business - OLCC paperwork will be filled out at the time of pick-up.

  • The Beer Walker // IPA // Our longtime friend Gary, also known as “The Beer Walker,” was the first customer through our doors in 2008. a lover of crisp, hoppy beers, Gary often lets us know how he feels about the evolving Ipa. Originally developed with his friend kirk Studach for Gary’s 75th birthday, we once again brewed this IPA to feature crisp malts and generous amounts of Simcoe, Strata, and Centennial hops­—and there is certainly no damn lactose, mosaic, or haze in this beer! // 7% ABV // $3.50/16oz Can, plus deposit

Releasing Saturday, 5/22

  • The London Chronicle // London-Style Porter // This classic London-style porter is the perfect dark beer for a warm spring afternoon, balancing a complex malt profile full of chocolatey, nutty grist character with refreshing drinkability and a crisp, roasty finish. // 5.5% ABV // $2.75/16oz Can, plus deposit


GENERAL UPDATES

  • Employees post-shift hanging out clarification

    • Although as of Friday COVID related rules about post-shift socializing will be able to be relaxed, it is important to still remember that customers recognize all of us even when off the clock, therefore we need to maintain a positive image of the company. Hosts may ask a group of employees after a shift to move tables if the location is on a wait and the table is otherwise needed.

  • Employee Mask Policy Updates

    • Keep an eye open on either Friday or Monday for details on changes to our employee mask policy

  • Employee Benefits Change

    • Pre-COVID, we offered employee sampler trays for $2.50. Since we are no longer doing taster trays, we are now offering 5oz samples for $.50 (max of 5 samples per day, and no duplicates)

PUB UPDATES

  • Softball season is starting up and Block 15 has continued to partially sponsor the women and men's teams. Part of their sponsorship is two free growler fills per game (or two pitchers after the game, but with current restrictions on large groups, you can expect to see more growler fills). Please use the House Comp button when discounting these. **This will be the same at the Tap Room, too!**

  • The bench planters outside of Caves should be left outside from now on, and watered when you water the other outdoor planters.

TAP ROOM UPDATES

  • Beginning Monday, the Taproom will be transitioning away from table-side service, and to Toast’s QR code based ordering system. On Saturday morning there will be a staff meeting for FOH staff to learn details and process of the system, but we would like to encourage staff members that visit the TR over the next couple days to give the new system a try. Ask your server for the QR Code, and you will be able to self order. Any feedback on missing or unclear items should be sent to K10 so that things can be updated.

In case you missed it before - school is officially in session! Our beer education programming started up a few weeks, and we’re excited to get everyone on board. Every Block 15 team member will be participating in this program that will teach you about our history and beer knowledge. Releasing Saturday, 5/15

  • Fresh Flow // IPA // A summertime IPA featuring a soft malt base beneath a tidal wave of exotic tropical and juicy citrus hop varietals. Featuring label artwork by Chris Herbst of Ashland’s Flow Factory NW, Fresh Flow is brewed often, canned fresh, and ready to float into the finest bottle shops, beer bars, and markets around the pacific northwest. // 6.5% ABV // $3.25/16oz Can, plus deposit

  • Helles Bock // Strong Lager // A full-bodied lager that features toasty, sweet maltiness with a restrained hop profile. This classic German-style beer dances with notes of bread, spice, and pine. Helles Bock is a smooth and clean lager that finishes delightfully dry. // 6% ABV // $2.75/16oz Can, plus deposit

  • Cassidy 2021 // Wild Ale with Flowers // Inspired by my daughter, this wild farmhouse ale was matured in Sauternes wine barrels with brettanomyces and then conditioned on spring flowers just before packaging. Cassidy is brewed each spring, bottled the following spring with honey from her Grandpa’s bee hive, and released around her birthday. Each bottle contains a portion of all previous years' blends.   • Nebula is also returning this week!


GENERAL UPDATES

  • Starting in a few weeks, we are doing away with the Drive-Thru Sale, and thus our keg sale process and the timing of our packaged beer releases will change. More information will be available next week as we hash out more details!

PUB UPDATES

  • In addition to the beautiful new flowers in our planters, we will be getting some hanging baskets this weekend. These will be watered using the drip system that we have installed, but if you notice some areas dripping excessively, please check in with a manager.

  • While we are waiting for a fix for the soup station fridge, we will keep desserts, milk, and heavy cream in the bar bottle cooler.

TAP ROOM UPDATES

  • Some of the vinyl panels on the patio came down today, which means we have a bit more airflow on the patio now! This will be nice on the hot days to reduce the temperature of the patio, but it will also still allow some wind blockage for the blustery summer evenings. We will keep an eye on how this feels, though, and remove panels as necessary with weather changes and feedback.

  • Pretty new hanging baskets will be going live this weekend! Like the Pub, they’ll be part of our drip system but keep an eye on how they look and let a manager know if you think they need something.

MENU UPDATES

  • We have made the difficult decision to take chicken wings off of the regular menu. We know that dropping a popular, high-ticket item like wings is rough on our FOH staff, but it will help us out in the long run. The process of making wings in the kitchen has proven to be very difficult with current social distancing measures. We are only able to staff one person at the frying station, and that makes a busy job even harder. The realities of food costs also play a factor into the decision, and our goal is to provide amazing food at reasonable prices.

    Now, the good news...we will plan to run a chicken wings daily special when enough servings are available after breaking down whole chickens for other menu items. We are also introducing delicious new menu items shortly. Those include advancements of our enchiladas, the cold fry chicken sandwich and a chickpea shawarma salad! We will keep everyone in the loop as these exciting changes are made. 

    Thanks again for your understanding!

  • This Friday we will also be making a change of desserts! Melissa has developed the CUTEST most delicious delight we are calling the Coco Bell! It is our take on the classic 90’s snack cake, the Ding Dong! It is a scrumptious chocolate cake with a fluffy whipped slightly sweet filling made of cream cheese, powdered sugar, heavy cream and a touch of espresso and topped with silky ganache and a touch of sea salt. To finish it off it is garnished with a swirl of the filling down the center and chocolate shavings. This will be replacing the Bakery Bar as our signature dessert. We will keep ice cream around of course for root beer floats!

PUB UPDATES

  • Another quick reminder to please find a cubby for your work shoes, and to bring home excess personal belongings from the breakroom. Any items not in a cubby or on a hook (or clearly labeled) by next Tuesday, May 11th will be gathered up for one last chance to claim before being donated. If you are having trouble finding a cubby, please let a manager know and we can help you find one.

  • The standing propane heaters, and the umbrellas over the 100's should no longer be out at the same time. The close proximity of those heaters to the umbrellas creates a potential fire hazard. Please use your best judgement and consult with a manager when deciding which of the two to put out for the day--luckily we are heading into more consistent warm & dry weather!

  • If you are jumping behind the bar to assist in pouring, please double check all glasses for remaining lipstick/Chapstick marks. These glasses are still clean, but will need a polish with a lint-free rag or clean paper towel before using.

TAP ROOM UPDATES

  • There are a few additional external cameras we have installed, specifically in the breezeway/back parking lot area. This is to ensure if someone ever goes back there solo to take out the trash/arm the back building/etc. they know it’s safe and there isn’t anything sketchy going on!

MARKETING UPDATES

BOARD SHORTS, NEXT SET IPA & COMMEMORATIVE PIN

This Friday, we are releasing our very special Board Shorts, Next Set IPA. Brewed in memory of our dear friend Seth, this revised recipe is one that we feel he would have loved…tropical, citrus and full of personality!

We are also selling special enamel pins of Seth’s shorts from the can art to recognize Brain Tumor Awareness Month in May. Pins will be available for purchase at both locations for $5. A portion of Board Shorts, Next Set beer sales, and 100% of pin sales will be donated to the OHSU Brain Institute in Seth’s honor to help find a cure for brain cancer.

STICKY HANDS, CROSBY CUTS

Also releasing this Friday is a unique varietal of Sticky Hands - Crosby Cuts was brewed with hops sourced specifically from Crosby Farms, located near Woodburn, to coincide with the grand opening of their outdoor beer garden, Topwire. Sticky Hands, Crosby Cuts will be available exclusively at both Block 15 locations and Topwire this weekend before hitting distro next week.

PUB UPDATES

  • The break room is getting a little crowded with excess shoes and belongings. Please pick a cubby for your shoes, or take them home if you don't prefer to leave them here (same goes with water bottles, tupperware, clothing, etc.) Anything that is left after two weeks will get placed in a box for a final chance to be claimed before they get donated. If you are having trouble finding a cubby or storage space, please feel free to check in with a manager! Thank you all for helping to keep this a clean and comfortable space!

  • Cocktail flasks will soon move to being filled to order (meaning we won't have back-ups living in the bottle cooler). With this shift, we will also be able to offer our standard Margarita to-go again. Hooray!

  • When hosting, please disable the table map for the time being. It seems to be one of the reasons why the WatlistMe app is slowing down. We've reached out to the folks at WaitlistMe to see if they have a solution, but this should help the app to move a little faster on the Host iPad.

TAP ROOM UPDATES

  • The grass pavers at the north end of the patio are looking good, so hopefully those should be in action soon! We’ll keep you updated!

  • With the warmer weather the Patio does end up getting a little warm with the vinyl windows and wings up - just an FYI we will be removing these once the weather is more consistently nice, so you can communicate that to customers.

  • It has been added to the kitchen closing list as well, but keep an eye on the sieve that goes into the floor drain. If you notice it getting clogged up, try to clean it out so the drain doesn’t overflow! This will be especially important on busy days when we’re running a lot of loads of dishes.

  • Fresca Pils // Italian Pilsner // A crisp, hop-forward Italian- style pilsner brewed with Italian Eraclea Pilsner malt and generously hopped with European Styrian hops, lending zippy notes of citrus, berries, and fresh-cut grass. designed in cooperation with label artist Chris Herbst of Ashland’s Flow Factory NW. // 5.3% ABV // $3.00/16oz Can, plus deposit


GENERAL UPDATES

EMPLOYEE MEALS

Some employee meals have gotten a little out of hand in creativity, which can put a strain on the line when they are busy. In the past we had a rule about food modifications, however with everything going on we have not really enforced it, but now that we’re getting back into a somewhat normal swing of things we need to bring it back up again.

When ordering your employee food, please limit modifications/additions to no more than 4 items without talking to the lead/manager on the line. It takes the kitchen a lot longer to make something with a number of specs because of the amount of focus they need to put into it for accuracy. If you are wanting something super special, please make sure the line has time for it. This applies during your shift as well as after.

Also, please remember that the employee discount is designed to apply to “a standard meal.” To better define that, we as now saying that the item(s) pre-discount must be less than $25.

COMMON BOND

Feel free to grab some more Common Bond (up to a case per person) from the Tap Room to keep your beer fridge stocked and loaded! Just check in with Tap Room FOH staff and they can grab it for you.

MENU UPDATES

PAINTED HILLS BEEF IS BACK!

We have been so happy with the Painted Hills Natural Beef that we have been using for the Caribbean Burger, we have made the decision to switch all of our burgers to it! This switch will happen this week so have a burger and let us know what you think!

NEW FISH & FRY FISH SUPPLIER 

We have also switched our seafood supplier to Ocean Beauty seafoods and are receiving a new cod for our fish and fries! It is an arctic NW cod that has a slightly higher fat content then our current offering so it has a silkier, more delicate texture with a clean and slightly sweet flavor. The fish gets processed right on the boat and flash frozen for optimal freshness as well. I have been SO very pleased with our fish and fry quality over the past year, and this new cod is just going to take to 1,000! 

SPRING/SUMMER MENU UPGRADE UPDATES

Sarah is starting to put together our new menu through the month of May. Over these next few weeks there will be some items that will be going away as we transition into a slightly smaller, more intentional menu at both locations. This will also give us the ability to run more long form (week or 2) specials and integrate those with programs like the Staff Provisions we did pre-pandemic! This week we finished the Artisan Plate and the Winter Lentil salad for the season, as well as Chips and Salsa downtown.

NEW STRAWS

We have replaced our paper straws with BIODEGRADABLE (**NOT COMPOSTABLE**) agave straws! They are made from the spent agave from tequila distilleries! The straws are much sturdier, and closer to a plastic straw. It is extremely important that these make it into the trash, not the compost or we will get in trouble with Republic Services.

**Here is a quick refresher as to the difference between biodegradable and compostable!  

PUB UPDATES

  • To soften the immediate rush of orders that come in as folks line-up outside the doors before open Friday-Sunday, we are going to shift to being ready to open and seat guests at 11:15. This will help to pace seating and stagger the orders as they come in. Please be sure to complete opening tasks in a timely manner so that we are ready to roll by 11:15.

  • Please check in with the Host before seating yourself at a table (whether that is outside or inside--Game Room included).

TAP ROOM UPDATES

  • We have taken the “Add Fried Egg” option off of Toast for ordering, as there isn’t a super easy way for the TR kitchen to whip up a fried egg.

  • Don’t forget to keep watering that new lawn!! Keep an eye on the actual sod as well, and hand water that if necessary if the sprinkler isn’t hitting it (you’ll be able to notice the more brown parts).

  • A few seating options have been added in the front part of the outside TR area - we have brought back the barrel furniture in the entryway, and we have put the fireplace benches around as well. The location of these may be fluid for a bit as we figure out the best place for them. Ordering-wise, these locations will order (similar to the outside benches at the Pub) up at the counter. We are strongly discouraging entrée-ordering for these, both to keep the kitchen above water and for a good experience for the customer (eating without a table isn’t so fun/easy).

    • Hosts - feel free to seat these for folks waiting for a table or for people just wanting a beer and maybe a quick snack. Let them know to order at the counter.

    • Make sure to take their card and create them a tab with their name and location, i.e. “Paige Blagg - barrel furniture” or “Chris Heuchert - benches.” It doesn’t need to be super specific, just enough for us to know where-ish they are. For the time being lets just keep their cards in the til, since there won’t be a ton in circulation.

    • These shouldn’t be considered walk-up seating though, they should still check in with a host before being sat! This is important for employees to know as well!

GENERAL UPDATES

  • Mug Club renewals will be starting in the next couple of weeks. Keep your eyes peeled for more info on the 2021-2022 Mug Club year, as well as information for guests that would like to enter the Mug Club lottery.

  • If you find yourself at the Tap Room, chat with a staff member and they can grab you a case of Common Bond. Enjoy it for this gorgeous weather coming up!!

PUB UPDATES

  • On Friday (4/16) we will be changing our SeekOut offering to Raspberry + Meyer Lemon (this will phase out the Key Lime + Mint). We are also replacing BrightCider with the Prickly Pearadise from 2 Towns!

  • We have a short, metal table that can be used to help packaged take-out orders that are being fulfilled in the Pub kitchen Monday-Thursday nights. Please bring this table back over to the Caves space when you are done to help clear space in the kitchen.

  • Please be mindful of how close the patio heaters are to the umbrellas over the 100's tables. Moving the heaters closer to the edge of the white line should give enough room to protect the umbrella from excessive heat.

TAP ROOM UPDATES

  • The new extension of pavers off the patio is installed and looks awesome! We’re waiting for the grass to get settled, though, so it won’t be in service for another week or two. In the meantime, we do need to keep it watered so that grass can grow and get strong. It needs to be watered 3 times a day, and managers will check in with you regarding the watering schedule and how to do it.

  • We will be bringing back some seating options that are more conducive to folks just wanting to get a beer and hang, or wait for a table (similar-ish to the barrel tables). The exact location of these extra spots and logistics re serving (table service vs. counter), will be explained as we finalize it more! Think of these more similar to the heckle bench at the Pub!

  • There is a way to turn on the lights in the tent without turning on the heater at Table 61, which will be super nice as the weather gets nicer and the lights may be nice but the heaters not! Check in with a manager to learn how to do this.

GENERAL UPDATES

  • Discounts

    • Through some recent audits, we have noticed that some discount codes have been used for purposes other than what they are intended for. So, here is a list of the discount codes in the POS, and what their intended use is. As a FOH Staff member, please familiarize yourself with this list. This list will also be printed near the bar terminals at each location for reference. If you ever have a question, please check in with a manager for clarification.

PUB UPDATES

  • We are looking to add to our pool of Lead servers at the Downtown Pub! If you are a server interested in a Lead position, please message Goody on HotSchedules no later than the end of day on Tuesday, April 13th. Interviews will be scheduled that week and into the following week. Feel free to reach out to Goody if you have any questions!

  • Chris has an email out to the folks at WaitlistMe to try to see if we can fix the severe lag on the Host iPad. Thank you all for your patience in the meantime!

  • A quick clarification on scheduling when taking to-go orders: as you schedule a to-go order, at the bottom of the pop-up it will often say "The selected time slot is currently full. The next available time is 1:05." (or whatever time is available). To schedule the order for this time, you will need to use the time-scroll above, and adjust the time to match the next available time slot (ex. the time scroll says 12:55, but the next available slot is 1:05. You will need to move the scroll until it says 1:05 at which point the red typing will disappear and you can complete the scheduling).

TAP ROOM UPDATES

  • We are doing some upgrades to the lawn area to the north of the Patio - the grade of the hill is being leveled out and we are installing grass pavers so we can add more tables, they can be more level, and it won’t be as soggy!! The work is being done this week, but we don’t quite know when the final product will be usable.

  • Make sure to double check the Barrel Room and ensure it’s ready for seating before you start seating it! This means the AC unit should be off, tables wiped, and in general it should be tidied up post-brewers lunch/QC/etc.

  • As you’re bussing tables in the tent and the patio, if there are full water glasses or pitchers on the table feel free to use them to water the planters! We don’t need to waste water and it’s a good way to slowly and routinely give our potted babies some water.

Releasing Saturday, 4/3

  • Illuminated // Belgian-Style Tripel // A complex sipper with a classic Belgian yeast profile. Leads out with rich malt flavors, but finishes nicely crisp and subtle on the palate. // 9% ABV // $5/500mL bottle, plus deposit


MENU & FOOD UPDATES

MENU UPGRADES STARTING WEDNESDAY, APRIL 7TH

Spinach Artichoke Dip // Sarah has been working on the spinach artichoke dip recipe and plating over the past few weeks! It has been the same (delicious) recipe since we opened in 2008 so she worked with it to see how it could be improved. We have changed out the cheese for a little more depth by replacing the cheddar-jack with gruyere, added some lemon zest, and then used aleppo pepper for a touch of heat. We are SO happy with the outcome! Additionally, we tested it out with multiple pairings and found the flatbread to be the most complimentary. YUUM!

Pimento BLT (Replacing the Meatloaf Sandwich) // The second is the seasonal replacement for the Meatloaf Sandwich. It will be replaced by the Pimento BLT, with toasted Pain de Campagne bread, house pimento cheese, smoky bacon, iceberg lettuce, tomato, and mayo. Best BLT ever IMO. 

New Bacon // With the addition of the BLT we did some looking into other bacon options and have decided to make the switch from our current Carlton bacon to Zenners. They are a Portland based company that makes wonderful sausages and other pork products that we have used over the years. It is a far superior product and we are SO excited to be supporting this amazing, family owned Oregon company!

Be on the lookout for more info and procedures for these items soon! 😋

GENERAL UPDATES

  • Just a heads up, the school zone speed limit is now being enforced on Highway 99 in South Town since school is now (somewhat) back in session. It is enforced Monday thru Friday, from 9am-5pm, so please be aware of that as you’re heading to the Tap Room, be it for a shift, transfers, or just for fun!

  • We’re doing another round of Common Bond employee-only 4-packs! We’re going to open it up to allowing employees to grab another 2 4-packs, and you can only do so on Friday at the Tap Room. Please mention the word “thirteen” when asking to pick up your 4-pack so we can ensure that only those who are truly reading the brewsletter are reaping this benefit (and also don’t spread the codeword around to others - keep your fellow staffers accountable and make sure they’re also reading). Enjoy!!

PUB UPDATES

  • For those of you that are Toast trained: when taking a to-go order please use the "Schedule" function when you ring in the order. Scheduling these orders in our system will greatly help control the timing and flow of orders coming into the kitchen, and will help to prevent the line from getting overwhelmed between in-house and pick-up orders. Below are some additional details based on whether you are taking an over the phone order, or a walk-in to-go order.

    • Over the phone: As you are about to take the order, use the "schedule" function to find the next available time slot. You can find this by starting a new tab in the "Quick Order" screen and selecting the "Dine-In" button. Once you hit this button, it will prompt you to ring in the order as any of the following: Take-Out Pub, Take-Out Caves (only use if you are operating out of the Caves space during the weekend), Curbside, or Online Ordering. Once you select one of the above, it will take you to a screen where you are able to gather some customer info. In the upper right hand corner, you will see a button that says "Schedule". Once selected, it will prompt you to select a prep time for the ticket which you can leave at 15 minutes and hit Next. The next screen will show you the next available time slot based on the number of take-out orders the Pub or Caves is currently fulfilling. Inform the customer of this time slot and continue to take the order. If you need to override the automatically selected time slot based on customer request, please check in with a manager first.

    • In person: This process doesn't change too much other than the fact that you will use the schedule function when inputting the order. Please "schedule" the order for whatever time you told the guest that the order would be ready (so if you said the order would be ready in 20 minutes, schedule the order for the time slot that would line up with that quote). Based on the amount of orders that we already have at the moment, you may need to override the scheduling system to allow you to select the specific slot.

    This all may be a little tough to picture without going through the process yourself, so please feel free to check in with a manager if you have any questions!

  • We have Whiskey A Goji Flasks and in-house batch back for a limited time while we solidify a new whiskey cocktail for springtime. This will be a Pub only offering since we are only offering it for a couple of weeks.

TAP ROOM UPDATES

  • Table tents are back in action - we have new, cohesive table numbers printed and installed! Please remember to wipe these when cleaning each table, and remember to put them on their side so we know if a table is dirty!

  • With the warmer and nicer days, the fireplace may not be on right at open, so keep a feel for the weather to determine when is the right time to turn it on. Since it takes a bit to ignite, make sure to communicate with folks surrounding the fireplace that they may smell a bit of gas and to not be alarmed.

  • In the tent, the lights have to be connected to Table 61’s heater, and as the night goes on it is nice to turn on the lights, however the temperature may still be too warm for a heater. So make sure that the folks sitting at Table 61 are ok with their heater being turned on and you can go from there!

REVOLVE ANNIVERSARY ALE

What an adventure these past 13 years have been! As we look back on our time as a company, we are overwhelmingly thankful for the support we have received both from our hometown community of Corvallis, and throughout the Pacific Northwest—we truly would not be where we are without everyone, together.

Our brewers have crafted an extraordinary beer to release for this special occasion, our anniversary Bière de Champagne, REVOLVE.

To revolve is to orbit in a curved path, never stopping or standing still. As we enter our 13th year of constant development, this Bière de Champagne was designed to showcase superb ingredients and advanced techniques. Featuring only Oregon-grown and malted mecca grade pilsner and pale malts, fermentation with select brettanomyces, and maturation in apple brandy barrels for over a year before bottling in the méthode traditionnelle. Bottles were riddled in a traditional rack, disgorged to remove the yeast, and finally corked and caged. Revolve symbolizes our desire to remain in constant motion, without forgetting where we come from.

GAZETTE TIMES BURGER SHOWDOWN

Starting Monday March 29th, the Gazette Times will be running a best burger contest with 10 other restaurants in town! We will be participating, which will mean we will run a burger special at all locations through May 7th! People can vote on their favorite burger online via the Gazette Times (more specific info on this TBD).

Caribbean Burger // Painted Hills Beef, jerk seasoned onion & bacon jam, pickled jalapenos, cilantro, shredded cabbage, tomato, and citrus aioli on a toasted bun. Served with beer battered fries, and a 10oz Joy, all for $15!

PUB UPDATES

  • In the coming weeks, we will be sprucing up and replacing the plants in the majority of our planters by the waiting benches. Since these are under an awning and do not get hit with rainfall, it is extremely important to make sure they are watered regularly. With that being said, we are moving to water these 3 times a week now (Sunday, Tuesday, and Thursday).

  • With another shift in service, all of our floor lists have been updated by the wonderful Elise. If you notice that something should be added or modified on the lists, please reach out to her.

TAP ROOM UPDATES

  • If we’re in the middle of a staff or shift change and you’re seating people, feel free to just say something along the lines of “We’re doing table service, and one of us will be right back with you to help you.” Since we’re not doing specific set sections, it’s okay to not be super specific with server names, and it helps deter confusion if there is a server change!

  • Make sure to not page people more than 15 minutes before their reservation - the “paging” system isn’t so much a reminder as to their reservation, it’s more of a “where are you” alert. So if the page comes to early for folks, it may be confusing for them thinking their table is going to be given away even before their pre-reserved time.

NEW SPECIAL NEXT TUESDAY

We’re releasing a special beer next week for our anniversary (details will be available for you next week regarding the beer), and with that we’ll be running a special to go along with the release! The Grilled Happy Anniversary - grilled house baked brioche with melted fontina, speck (Italian smoked ham), caramelized leeks and apricot-serrano honey! Yum!

PUB UPDATES

  • Beginning this week, please make sure to be mopping the bathroom and hallway area at night, and touching it up with Swiffers in the morning as needed.

  • To help better manage flow on the waitlist requests, we have updated the settings to allow no more than 3 groups and/or 10 people per hour

  • We have changed our coffee provider to now be sourcing them from BeSpoken Coffee and no long from Holderness.

TAP ROOM UPDATES

The tent walls will come up and down depending on weather, FYI, so you can let people know this for future reference.

Releasing Saturday, 3/13

  • Selection Series, Centennial // IPA // This IPA was brewed exclusively with Centennial hops from Wyckoff farms in Grandview, WA. With an unobtrusive grist profile and soft water base as the canvas, this beer is meant for Centennial’s vibrant notes of candied orange, pine, and rose to shine. // 7% ABV // $4.00/can, plus deposit

  • The DAB Lab, Double Dab // Imperial IPA // Pairing a soft malt profile and a pair of juicy yeast strains, Double Dab elicits a double-take at the first sip, bursting with notes of pineapple and passionfruit, lemon zest and rind, and then eases into a wave of resin and dank herbs. // 8.9% ABV // $4.50/can, plus deposit

GENERAL UPDATES

  • Daylight Savings time is this weekend! Don’t forget to Spring forward!

    • With that being said, we should expect some later nights on the restaurant side of things as it’s lighter later and folks stay out a bit later!

  • INDOOR DINING BEGINS AGAIN!

    • Both the Tap Room and the Downtown Pub will reopen on Friday for limited indoor dining. While a lot of guests will be excited to come back inside for service, it is important to all of the managers that we are able to continue to maintain social distance as employees. This includes space behind the bar, in the kitchen, around server stations, etc. Please help us continue to maintain this distance to the best you can.

    • Occupancy Limits: The host has specific limits for indoor areas (we have the dining room broken up based on airflow of specific areas). As customers, please keep the host up to date if you have joiners, and overall check in with them to ensure that we are not exceeding those limits.

    • Reservations/waitlist: From our web site guests will be able to add them selves to the waitlist (Downtown only) as well as request a reservation (both locations). From the Block15.com homepage, you will select your location, and there will be more details and a form to complete to request being added. Hosting staff will still confirm all guest requests based on current availability/flow of the restaurant. All guests will be able to share their dining preference (outdoor only, outdoor preference, no preference, indoor preference, indoor only) to help the host best meet their needs.

    • Staff Distancing: As we increase the number of staff members in both locations, please make sure to communicate through signage or table tent positioning when a table is clear but still dirty. This becomes more important as we have more folks around and it is harder to talk to everyone directly.

    • Please see location specific details below!

  • On Friday, March 12th we will be launching some new Spring TRAVELER cocktails! Details are below (pricing will be TBD):

    • Earl Grey Paloma - Grapefruit, Orange and Earl Grey infused Olmeca Altos Reposado tequila with lime juice and simple syrup.

      • This will replace the Margarita for to-go, but we will still have the Margarita for in-house consumption.

    • Tradewinds - Flor de Cana Gold rum, Appleton Estate Reserve Blend Jamaican rum, apricot, lemon and house made coconut cream.

      • This will replace the Jungle Bird.

    • Rain Drop - SlapTail vodka, housemade lavender simple syrup and lime juice.

      • This will replace the to-go version of the Pear Flower.

    • The Whiskey A Goji will stick around for a few more weeks, but will be replaced with a Spring whiskey cocktail in the coming weeks.

    • These will also all be available for in-house!!!

MENU & FOOD UPDATES

HUMMUS PLATING

We have switched from using the boards at the Tap Room and the Pub for the hummus plate to the round brown and white Caves plates! There will be a procedure pasted in the kitchen, but the only major change is the plate it goes on!

QUICK FIRE MENU ITEMS

With us opening this Friday for limited in house dining at both our locations, we realize that we could chance some higher than normal ticket times out of the kitchen since we still want to maintain some sense of social distancing on the line. With this we want to be sure we are able to offer our guests the opportunity to order a quick fire appetizer if there is a chance their meal could take 25+ minutes.

Communication around food times is so important with tables, especially as we make yet another pivot! The expo screens now have color coded bars at the top of the order to help quickly identify how long since the order was fired to the kitchen. FOH staff, please pay close attention to these colors/times to help make sure that your tables are kept up to date on expectations.

Some great example language when telling a table about longer food times could be something like, “Because we are wanting to ensure social distancing among our kitchen staff, it is taking about XX minutes to get entrees out of the kitchen. But, we have made a couple of snack items high priority that we could get going as an appetizer if you would like.”

Listed below are the items that if they are ordered in a singled out ticket are priority fires.

GTF GREENS

Starting this week we will be switching from the Arcadian salad greens we have been using to local salad greens from Gathering Together Farm! 

PUB UPDATES

  • Upon reopening, we are going to offer glass pours of the Chardonnay and 3 Fools Superfool. No Grenache at the moment, but we may bring that one back in the future.

  • Lists are going to continue to be updated, so please pass feedback along to your manager if you see anything that needs to be updated on Sani, Opening, Closing or Shift Change and Delivery Driver lists.

  • Indoor Dining Updates

    • Caves Public House will not open for indoor dining at this time. We will evaluate reopening that space as we see the demand at the Pub and are able to bring on enough staff to make it possible to run efficiently.

    • Upstairs: For now, the upstairs will stay closed. As we gauge demand, and can adjust staffing levels we will communicate with you all as we prepare to open it. Please treat this area as an extension of the employee break room. Feel free to use the space for a mid-shift meal, but no post-shift drinking upstairs for employees.

    • Hours: Last seating will extend on Friday & Saturday to 10pm. Sunday thru Thursday will continue to be 9pm, but may extend at the bar managers decision. All guests need to be out of service areas by 11pm.

TAP ROOM UPDATES

  • Make sure you’re always comfortable in your role - if you feel like you need to do something else, let your manager/coworkers know! Especially on longer shifts, it’s easy to start to feel burnt out, so if you need to take a break from serving, stop hosting to go float, etc., communicate that!

  • Let’s try to keep that walk-in cooler looking gooooood! If you have time, reorganize/recycle extra boxes, stock beer, and tidy up in general if you can! There’s so many people coming through that space it’s easy for it to quickly get messy!

  • Indoor Dining Updates

    • Hours: Last seating will extend on Friday thru Sunday to 9pm. Monday thru Thursday will continue to be 8pm, but may extend at the decision of the FOH closer. All guests need to be out of service areas by 11pm.

    • Waitlist updates: The TR Waitlist app now allows you to assign a table to a reservation or waitlist person as well as allowing you to do two-way texting with guests. This should help in organization as we have more tables/options for folks.

MARKETING UPDATES

IT’S ON US CORVALLIS PARTNERSHIP

The It's On Us Corvallis/Block 15 Open Tab partnership officially begins this weekend! As promised, here's the rundown on how this partnership will work:

  • IOU Corvallis is providing Block 15 with $3,000 to provide meals to the community. We have worked with their volunteers for the past several weeks to create organized, safe, and equitable access to these meals, maintain COVID-safety requirements, and to make the process as seamless as possible for our restaurant team members.

  • Due to limited seating in the restaurants and fluctuating risk levels in Benton County, we have decided to offer the Open Tab program through the downtown take-out and delivery service only.

  • On Friday 3/5, we will post on social media announcing the partnership, and make a lottery available to interested guests. The lottery will close on Sunday 3/7 at 8pm, and we will randomly select entrants on Monday 3/8. The folks selected will receive a unique one-time discount code good for up to $15/meal, which will be redeemable via the downtown ordering website. This form will be available in English and Spanish.

  • In addition to IOU's $3,000 contribution, Block 15 is contributing an additional $300 toward the total available Open Tab amount. On Monday 3/1, we activated the community donation button to allow our guests to contribute to the It’s On Us Open Tab Program as well.

  • Pub/Delivery FOH Info:

    • Guests can redeem their codes Monday 3/5-Friday 3/12. Codes are good for food only. The $15 amount, no dine-in, and food only are clearly communicated on the lottery signup, but we will be asking our FOH staff to do their best to help guide folks in the right direction if they have questions or incorrectly try to apply the discount to alcohol.

    • Discounts are NOT eligible for cash back - if someone does not use their entire discount, the remaining amount will be returned to IOU to support their mission.

    • This should be very easy for you to execute as a restaurant employee, but please let a manager know if you have any questions!

BLOCK 15 SELECTION SERIES IPA

This week marks our next release in the Block 15 Selection Series IPA’s - Citra! The Mosaic one was super well received and popular, so make sure to get your hands on some of the next releases!

FRIENDS AND FAMILY SPECIAL RELEASE - COMMON BOND IPA

We created this as a friends & family beer for accounts and friends as a “thank you” for the last 13 years of support, great work, and enthusiasm.

4-packs will be going out to these folks starting this week and as part of this, every employee will receive a free 4-pack of Common Bond!!! You can pick these up at the main location you work at - the managing bartender will have an employee list and will be marking names off as the 4-packs are picked up. Let a manager know if you have any questions.

The draft for this beer will be available starting Friday at both locations for public consumption, however the cans will only be available for the people on the friends and family list.

Thank you for all of your awesome work through these last 13 years, and especially the last year!

  • Dortmunder Export // Dortmunder Export Lager // Our Dortmunder Export is a study in classic lager balance, giving equal voice to biscuity malt flavor, crisp hop bitterness, and a clean lager yeast character. // 7% ABV // $2.75/can, plus deposit

We will be continuing this series over the next four weeks - next up: Centennial, Strata!


GENERAL UPDATES

  • As Daylight Savings, nice weather, and changing COVID-mandates start to come upon us, please keep an eye out and pay attention to updates, new mandates, and changes to hours, protocols, logistics changes, etc.!

PUB UPDATES

  • Unless they come with some cream or need a spoon to stir, hot drinks no longer need to come on an app plate with a napkin.

  • Outdoor planters (large ones on the 3rd street side, and the one in front of Caves) should be watered twice a week now (Wednesday and Sunday by the Delivery Drivers), with two pitchers of water each. Please pour the water slowly and evenly over the soil to ensure proper saturation. Plants under the tent should be checked for moist soil on Sundays and given one glass of water each if needed.

TAP ROOM UPDATES

  • Just an FYI, one of the three canned cider options we have, Cosmic Crisp, is 8% ABV! So please make sure to let folks know that before/as they are ordering it!

PEOPLE’S PINT HAPPENINGS

We are excited to announce that Block 15 will be partnering with It's On Us Corvallis in early March for their Open Tab program! More info on the specifics of the partnership will be in next week's newsletter. This week, we want to give you a quick introduction of IOU and what they are all about.

IOU was cofounded in April 2020 by three Corvallis Sustainability Coalition Food Action Team volunteers. The mission is to build community and help the economy through food - IOU pays local restaurants to make meals for the community. IOU Corvallis is a community-building program with a food access side-effect.

IOU was created to retain local dollars the most impactful way - by retaining local jobs. It’s an economics concept called Local Multiplier Effect. Rather than gifting meals or cash to folks who have lost their food service job, IOU hopes to help retain local employment opportunities and lessen the economic impact for individuals. In food systems theory this is called a market intervention.

IOU's Open Tab program is funded by donations from the community and features a different restaurant in Corvallis each week. That restaurant is provided with $3000 to open a tab. There is no need-based requirement or assessment, and anyone is eligible to utilize the tab. The downtown take-out and delivery service will be participating in the Open Tab program as part of our partnership, and we will give you the whole rundown of how the partnership will work in next week's newsletter.

Essentially, It's On Us Corvallis is a really innovative, unique, and uber-local program designed to support YOU! We all know it's been a pretty rough year for the restaurant industry, and IOU found an awesome way to help Corvallis restaurants stay in business and keep people working while also feeding people in need. The volunteers behind it are our customers (literally, you've probably worked a Bloktoberfest or three with them). This is an incredible example of Corvallis taking care of its own. We've watched this program grow since its inception, and we are thrilled to become a restaurant partner and introduce B15 fans to their amazing work.

BLOCK 15 SELECTION SERIES IPA

Starting next week, we will be releasing a series of one-hop IPA’s that focus on the unique and awesome characteristics of each featured hop. The other neat part about this program is that we feature the farm each of these hops is grown at as well!

These will release every week for a few weeks, and will be available on draft and in cans. More info will follow next week with the first release (Mosaic fans, rejoice!)!

UPCOMING BEER/PACKAGED RELEASES

Releasing Saturday, 2/20

  • Tough Sledding // IPA // Teaming up with our friends at Ruse Brewing, we harnessed a hop collective of Sultana oil, Citra, NZ Pacific Sunrise, and NZ Cascade to produce this hop forward hazy IPA that bursts with tropical and citrus notes. // 7.3% ABV

This is a collaboration with our friends up at Ruse Brewing!


MENU UPDATES

NEW MENU ITEM

Chickpea Shawarma
*Replacing the Vegetalian both the Pub and at the Taproom!*

Our vegan take on the classic middle eastern meat dish, traditionally cooked on a vertical spit. Gently roasted chickpeas reflecting the same spices of paprika, coriander, cinnamon and garlic nestled in a warm house baked pita with our cool garlic-dill tahini sauce, tomato, onion and arugula. Finished with a fresh, medium heat, chili sauce called shatta. This is a hearty, fresh vegan sandwich packed with complimenting flavors. 

*Shatta is a middle eastern fresh chili sauce consisting of green (jalapenos) and red (cherry bomb) chilis, cilantro, garlic, lemon juice, aleppo pepper, olive oil and vinegar. 

*This sandwich is totally VEGAN! Feta for non vegans is a great upcharge though! :)

FOH: Please do not encourage subbing protein for the chickpeas for this sandwich! The whole point is to get all that killer flavor that comes from the chickpeas! If a guest insists, please accommodate but do let them know that they will be missing a large element of the flavors the sandwich provides. Adding a protein is not an option, as it will not fit in the flatbread. A protein sub has no cost difference. 

ADDED NOTE! With the addition of julienned red onion on the line, we will switch from using the burger sweet onions on the SW Salad to the red onions!

PUB UPDATES

  • There is now a corkboard in the Breakroom that displays beer description sheets for our upcoming releases. Please be sure to review this board before each shift (both Front of House and Back of House) to learn more about our awesome upcoming releases.

  • Front of House, please check in with a manager before adjusting any inventory count numbers for cans, bottles, or to-go cocktails. These numbers are carefully put in, and there may be times where we appear to have a few cans left of something that is 86'd in the system, but that often means that it has already been ordered by a customer and is not currently available.

  • We have set notifications to pop-up as you all clock-in now. This will serve as our way of communicating "Focus Points" going forward. For this week, we would like everyone to focus on logging their temperatures as they clock-in.

  • We should always focus on top to bottom cleanliness when it comes to bussing tables. Please make sure to wipe down table tents and check under tables for food and other debris before seating tables.

  • It's Breakroom Tidiness Awareness Week! All dishes should be bussed upstairs, personal belongings either hung-up or organized and out of the way, and aprons/hotpads either in your cubby or in the hamper if it is a kitchen apron. This is a shared area, so let's please keep it looking nice. Also, remember to sanitize your area after you are done with your break!

Releasing Saturday, 2/6

  • Cosmic Cold Brew // Stout Cold Conditioned on Coffee // Boosting this brew deep into space, we partnered with Bespoken Coffee Roasters to wake up our Nebula stout with a 24-hour cold extraction on freshly roasted coffee beans. Cosmic Cold Brew perfectly pairs decadent chocolate and caramel roast character with a rich cup of java. // 7% ABV

  • The DAB Lab, Lil Dab // Dry-Hopped Pale Ale // The DAB Lab series focuses on vibrant hop-forward ales that prominently feature hop extractions. Lil Dab packs a punchy hit of citrusy and tropical hop flavors into a crushable 4.5% ABV hop experience—perfect for when just a lil dab'll do ya. // 4.5% ABV


PUB UPDATES

  • While we are remaining in the Extreme Risk category for the next couple of weeks, we still have some small maintenance and cleaning projects to knock out before we reopen for dine-in. For those of you that are working the floor or take-out/delivery, please check in with a Pub manager about tasks that can be completed.

  • We have added bottles of Broadley Vineyards "Claudia's Choice" Pinot Noir and Anne Amie "Twelve Oaks Estate" Pinot Blanc to our Take-Out and Delivery menu. Once we move through those (there are about 7 bottles each of the Pinot Noir and Pinot Blanc) we will switch to offering Compton Family Wines "Garden Series" Pinot Noir and Pinot Gris on our Take-Out and Delivery menus. Info on our current Pinot Noir and Pinot Blanc can be found below, as well as info on the Compton Noir & Gris (which is currently available at the Tap Room).

    • Broadley Vineyards, Monroe, OR // "Claudia's Choice" Pinot Noir // Dark garnet color in the glass. A complex nose unfolds with aromas of blackberry, cassis, damp earth and cardamom spice. Somewhat rich and plush on the palate but energetic in a mid-weight style featuring purple and blackberry flavors with a hint of black tea. Nicely balanced finish.

    • Anne Amie Vineyards, Carlton, OR // Twelve Oaks Estate Pinot Blanc // A soft, round mouth feel enhances pear and citrus flavors with hints of vanilla, leading to a long, rich finish.

    • Compton Family Wines, Philomath, OR

      • Garden Series 2018 Pinot Gris // This fruit-driven Pinot Gris brings crisp, juicy, enticing flavors that perfectly mix pear skin, rich apple, peach, and apricot flavors. Texture to spare with a broad mid palate and crisp natural acids.

      • Garden Series 2018 Pinot Noir // Fresh and attractive violets on the nose here with a supple and juicy array of very fresh red cherries that flow to the palate, where they are delivered amid succulent, upbeat tannins .

MARKETING UPDATE

SUTTLE LODGE WINTER BEER FEST - VIRTUAL ADDITION!

Beer festivals are (kinda) back!!

This year, we are participating in the 2nd Annual Winter Beer Fest at The Suttle Lodge on February 20th. If you are unfamiliar, the Suttle Lodge is an oh-so-cool resort just west of Sisters. This year the festival has gone virtual, where $40 gets you a mixed 6-pack and an insulated Miir camp mug, with proceeds going towards the Independent Restaurant Alliance of Oregon. In addition, there will be an evening of online brew talks, live music, raffles, and cooking tutorials. Happy drinkers with internet will find Cold Front or Joy cans in their mixed packs…if they get lucky!

If you’d like to participate, but can’t make it to the Portland, Bend, or Hood River pick-ups for the beer and mug, there is a $25 option to donate and participate in all the online activities.

GENERAL UPDATES

  • As more folks are coming back to work, don't forget to take your temperature daily and record it on the log at your respective locations.

  • We will soon be adding 750mL bottles of a Pinot Noir and Pinot Gris to our take-out/delivery menus at both the Tap Room and Pub. Keep your eyes peeled on HotSchedules for an update on which wines we are offering.

  • In a change from previous years, we will not be holding onto Bourbon Experience stamp books at either location. Please encourage guests to keep these in the wallets/purses. They are tiny and adorable and fit perfectly in card slots in wallets.

  • Super Nebula, Dulce de Leche sold out in bottles SUPER quickly via the Drive-Thru Sale, FYI! So if a customer asks (or you as an employee was wondering), we will have some available the day of. But overall, please just let customers know this was a very limited batch and we did just run tight on it!

Bourbon Month Special!

We will be running our most popular monthly burger style, the Maple Bourbon Bacon Burger, starting today through the end of the month to celebrate Bourbon Month! It will be available downtown and at the Tap Room and for takeout & delivery!

Blended after conditioning for two winters on local Montmorency cherries from The Cherry Country, Kriek marries the extraordinary expression of tart, orchard fruit and a delicate barrel character. // 7% ABV

  • Billy Breathes // IIPA // This double IPA is a dreamy, hazy exploration of soft grains and vibrant hops. double dry-hopped with five different tropical and citrusy varietals, Billy Breathes floats upon softly sweet grist with generous additions of malted and flaked oats for a luscious body and silky mouthfeel. // 8% ABV

  • Nugg Hugg // IPA // A sticky squeeze of hop nugs embraces you with this aromatic, juicy IPA. Nugg Hugg draws on a heady charge of American and Australian hops to deliver aromatic waves of candied peaches, pineapple, mango, and spruce. // 7% ABV


PUB UPDATES

  • As we move back into the Caves this Friday for Take-Out and Delivery during dinner, it will be incredibly important to keep up our great communication. Whether we are running low on a food item, or packaged beer/cocktail/wine, please remember to communicate these changes with folks at both restaurants.

  • Delivery Drivers: currently there is a list of duties that Drivers are expected to complete before leaving for the evening. Please continue to check this and fulfill duties at the Pub/check out with the Pub bartender before clocking out. Some duties will shift and change with our new operations, so please refer to this list for those specific changes.

  • Another note for Drivers: if you are waiting on a delivery to come up, please check in with the Pub to see if they need any assistance (bussing tables, running food, getting folks sat, etc). The Pub bartender and Delivery Lead will each have a walkie-talkie to communicate when your order is up and when they need you back to run the delivery.

  • The Jungle Bird is fully batched out now (meaning that the backs contain the pineapple and lime juices as well). To make the Jungle Bird now, all you need to do is measure out 5.5oz of mix, pour it over ice into a shaker tin, shake for 10 seconds and strain over ice into a rocks glass. The Whiskey A Goji will be full batched by this Friday as well and the process will be the same as the Jungle Bird, but with 4.25oz. of mix instead.

TAP ROOM UPDATES

  • Just a heads up - it is illegal to keep full propane tanks inside for safety reasons, so if we pull full ones to have as easy backups, please just store them by the kitchen door area during open hours and then lock them up through one of the other two heaters at night!

  • Keep an eye on the cocktail/beverage fridge and ensure the door is closed and things are looking tidy!

BOURBON MONTH IS (ALMOST) UPON US!

Last week we gave you a basic rundown of Bourbon Month happenings, but this document has a bunch more detailed information on all the things that are going on!!

We really encourage all staff members to familiarize themselves with this document, however Front of House folks should absolutely know the ins and outs of it!

BOURBON MONTH RELEASE BEERS

*These will be releasing on Monday, 2/1 as this is the start of Bourbon Month and we want the beers on first thing!!!

  • Super Nebula // Bourbon Barrel Matured Imperial Stout with Cocoa Nibs // Each year we mature Super Nebula—an imperial version of our Nebula stout—in unique bourbon barrels, followed by conditioning on cocoa nibs selected to complement that year’s blend. 2021 Super Nebula was matured in Basil Hayden bourbon barrels and then conditioned on direct trade wild harvest heirloom cocoa nibs from Bolivia. // 13.25% ABV

THIS WEEK’S MENU ADVANCEMENT ITEMS

With the superb advancement of the ciabatta for our newly advanced menu items, we are transitioning all ale bread applications to ciabatta! The tuna melt and vegetalian as of Wednesday will be served on our ciabatta! Procedures have been posted in respective kitchens!

A big thing to remember is that the new ciabatta is NOT vegan like the ale bread was. If a guest is looking for a fully vegan sandwich, please offer a burger bun or flatbread and inform the kitchen that it needs to be fully vegan.  The vegetalian is next on deck for our advancement team to tackle so this should only be for a short time. 


UPCOMING BEER/PACKAGED RELEASES

Releasing Saturday, 1/29

  • Love Potion No. 9 // Chocolate Raspberry Stout // This sweet stout was brewed with a tantalizing blend of specialty dark malts and conditioned on chocolate and a delightfully tart combo of red and black raspberries. A most romantic concoction, Love Potion No. 9 balances rich malt and chocolate flavors with vibrant berry character. // 7% // $4.10/16oz can

  • Turbulent Consequence, L'Ancienne // Spontaneously Fermented Ale // L’Ancienne, our most mature Turbulent Consequence release to-date, blends stock from barrels aged 36, 48, and up to 60 months old. Turbulent Consequence is brewed using classic lambic methods from the Senne River Valley in Belgium, including a multi-step turbid mash, inoculation with resident flora in our wild cellar’s coolship, and spontaneous fermentation and extended maturation in oak barrels. Mature barrels are then used in various blends throughout the year. // 6.7% // $11.50/500mL bottle

It’s mid-January, which means Bourbon Month is almost upon us!!! We will have considerably more information for you in next week’s brewsletter, but here is a brief overview of what the month will look like in these (still) COVID-times.

BOURBON LIST & COCKTAILS

More details will be available next week regarding the official bourbon list, as well as what cocktails we will be offering. With the launch of our Traveler cocktails, that means we will be able to offer some things to go as well.

For the first time ever, the Tap Room will also have all the bourbons available, so someone participating will be able to partake at both locations!

BOURBON MONTH STAMP BOOK

We’re changing it up this year and doing a stamp book (official name TBD) instead of a passport! It’ll still serve the same purpose - keeping track of what bourbons a customer has sampled. Stamp book completers will get a pair of specialty etched rocks glasses!

BOTTLE RELEASE OPTIONS

  • Seated Brunch, Saturday 2/6 // We are offering our seated brunch with pre-ordered bottles at both the Downtown Pub and Southtown Tap Room heated outdoor seating areas, beginning at 9:00am. The lottery for this is already closed and Paige will start sending out the first round of sign-ups tomorrow. There will be no tables at either location for guests that do not have a reservation through this lottery until the respective locations open for normal service!

  • Saturday Drive-Thru Sale, Saturday 2/6 // All release bottles will be available for customers looking for contactless pickup through our Drive-Thru sale. The online store to place pre-orders for this option will open on Tuesday, February 2nd at 5pm, and will close at 9am on Friday, February 5th. All orders through our Drive-Thru sale will be fulfilled in the back part of the Tap Room parking lot on Saturday, February 6th from 10am-2pm.

  • UPS Delivery // We will ship our specialty release beers via UPS (Oregon addresses only) on the Thursday before the release. This allows our guests that are not wishing to travel to still get their hands on the release beers, shipped directly to them. This ordering option will be available beginning Tuesday, February 2nd and will close Thursday, February 4th at 8:00am.

BOURBON MONTH BEERS

We’ll have more detailed information next week on pricing, descriptions, limits, etc., but here is a basic list of what we will be releasing!:

Cheeses in sauce - Velveeta, Tillamook Sharp cheddar, Monterey Jack. 

Strozzapreti literally means “priest choker or priest strangler” (maybe don’t share that with guests, just an interesting bit of trivia!). Its a flat sheet of pasta that is rolled for 2 sides to form a long s shaped noodle. 

A kids version of this mac and cheese will also be on the kids menu! Garnished with just breadcrumbs, sans parsley like before.

TAP ROOM UPDATES

  • Starting next Friday, 1/29 the Tap Room will be opening at 11:30am for lunch on Fridays! So that means hours will be 3pm-8pm // Monday-Thursday, and 11:30am-8pm // Friday-Sunday!

  • We have some new barrel tables that sit against the side of the building on the patio underneath the three large windows! These are extra seats for walk-ups primarily - because they are not near direct heat, we want to treat them like we do the entryway/lawn tables. The Table Layout in Toast has been updated to reflect them as well!

GENERAL UPDATES

NEXT ROUND OF MENU ADVANCEMENT

Warm Roasted Vegetable & Lentil Salad

Our advancement team killed it with this one, y’all. It is absolutely beautiful, healthful, and yet hits you like a comfort food! OH and it is 100% ORGANIC! Warm lentils, cumin & coriander roasted carrots & parsnips, tender spinach & arugula, light lemon vinaigrette, bright tzatziki, and a pile of fried parsnip crisps! I am so excited for this to join the Block 15 menu!

Classic Mac & Cheese

Let’s be real, there are few bad mac and cheese out there. And ours was one of the best! BUT we decided it was time for an upgrade! Test after test...after test….we believe we really nailed it! It’s simple in concept, yet hits you with a punch of flavor, with a unique new pasta (to us) to boot! The Strozzapreti really gives us an upgraded feel to a classic pub dish. Adorned with our same bomb parmesan breadcrumbs, I am super stoked about this dish! 

HOPPY HOUR UPDATE

There have been some questions about happy hour as we rolled out Toast. After some conversations, we have decided to suspend all happy hour item discounts (food and drinks) for now. If Mug Club folks ask about happy hour, the discount can be given by request (or offered to mug folks on Mondays) but the POS will not automatically apply that discount going forward. As things re-open, we will re-examine this policy, but wanted to clarify it for now.

2021 CULINARY WEEK!

As was mentioned in last week’s brewsletter, we’re participating in Corvallis Culinary Week (Month) this year. Beginning today through the 31st, we’ll be offering the below item:

Lamb & Pork Meatballs // House-made meatballs made with Anderson Valley lamb & Carlton Farms pork, panko, turmeric and red pepper flakes. Served with house tzatziki, mint-pistachio & raisin pesto and house baked flatbread // $14.99

*Just an FYI, this will only be available at the Downtown Pub, and will be available for take-out and delivery as well!

  • Fluffhead // IPA // Fluffhead is a fruity, hazy IPA that balances a soft malt body with copious dry hop additions. Flaked oats, English yeast, and special water treatment produce a fluffy, round body. Fluffhead finishes silky smooth, with just a hint of balancing bitterness. // 6.5% // $3.00/16oz can

  • Ridgeback Red // Red Ale // Ridgeback Red features a blend of rustic malts with zesty hops grown right here in the Pacific northwest. balancing flavors of caramel and toasted nuts with pine, lemon, and grapefruit hop character, It finishes delightfully crisp for a malt-forward beer. // 5.5% // $2.75/16oz can


PUB UPDATES

  • While the Caves space isn't currently open to the public, we do want to keep it tidy and organized. Bathrooms should be cleaned once a week, and there will be some cleaning/organizational projects added to Take-Out & Delivery duties lists.

  • On the topic of tidiness, please be mindful of the presentation of our dining room and back server station. We want to keep the restaurant looking nice and organized for the guests that use the restrooms or come in to pick-up/place an order.

TAP ROOM UPDATES

  • Please review our “Steps to Great Service” document so you know what we expect from you when hosting/greeting tables/running food/etc. and what roles look like based on how many people working. There will be a more condensed version of this posted in the breakroom/by the Read & Signs at some point as well!

  • Like in the Pub update above, please make sure to keep the bar top area clear, as well as any tables within the Tap Room. People still come inside to chat with the host and they come up to the bar to order packaged beer, so we want it looking tidy and not cluttered!!
