SEASONAL APPAREL CHANGES
Starting this week, we will be switching out all of the apparel we are currently selling for new styles. This is going to be the standard pattern each season from here on out (meaning changing quarterly). All styles will drop off and be replaced by new seasonal apparel. It is meant to create a more cohesive look with our apparel. All of the pieces are intended to be unique enough to sell on their own but complement each other when worn together. If you have any questions let Beth know!

Celebration of Flanders with pFriem Family Brewers
Wednesday March 20th (today) / 5-8 PM
We will be pouring four Belgian inspired beers from pFriem. We will feature their Flanders Red, Flanders Blonde, Oud Bruin, and Abrikoos Blueberry Lambic-style. A representative from pFriem will be sharing history, and brewing techniques from one of the world's most renowned beer regions.
Orval Day presented by Merchant Du Vin
Saturday March 23rd / All Day
Orval sells one beer, brewed to exquisite perfection within the walls of Notre Dame d’Orval Monastery in Belgium. Orval Day is meant to introduce this classically unique Belgian pale ale to someone, or encourage others to revisit an old favorite. Merchant Du Vin will donate a dollar of each bottle sold to Safe Water Network.

FINAL PRAY FOR SNOW
The final Pray for Snow is happening tomorrow (Thursday, March 14th) at the Tap Room! This last one will feature lift tickets for Mt. Ashland & Hoodoo, in addition to prizes from Peak Sports and other cool stuff! There will also be a cornhole tournament with a pretty kick-ass grand prize for the winners - a custom Block 15 cornhole set! Block 15 employees have been down on their luck for the past few events, so maybe this is someone’s chance! (Just make sure to wear non-Block 15 clothing!)

The PakTech 4-pack recycling program is still going to happen, we’re just waiting on some final logistics before officially rolling it out.

Matt Williams’ Kaju Pakoda, paired with The Cold Front
BEHIND THE BAR UPDATES
We are making a few changes to our Guest Beverage and Wine menu that will go into effect on Tuesday, March 5th!
Here is a quick rundown of the changes:
We will be bringing in a second Nectar Creek mead offering in addition to the Waggle. Right now Nectar Creek has two seasonal offerings - Top Bar (coffee session mead) and the Nectarade (lemon-lime session mead) which we will rotate between, starting with Top Bar.
Second, we are dropping the Ground Breaker Ollalie and will instead add SeekOut's Raspberry + Meyer Lemon Hard Seltzer to our line-up. SeekOut Real Hard Seltzer was started by the same wonderful folks over at 2Towns and is crafted using just fruit and water (the alcohol in the seltzer also comes from real fruit). No artificial flavors or refined sugars - just real fruit! This is also another great gluten-free offering! (We will still carry Ground Breaker's IPA No. 5 for a GF beer offering.)
Last but not least, we are changing up our white wine offering by dropping the Riesling and replacing it with a sparkling white wine! Yay for bubbles! These new cans of sparkling wine are very exciting because we will have less waste as each can is a single serving - plus they are quite delicious.

OYSTER WEEK AT BLOCK 15
Block 15 will be hosting it’s first inaugural Oyster Fest the first week in April (April 1st-7th). This will be a week of food specials, events, and beers made with or designed around oysters. Each of our three locations will have a variety of food specials featured throughout the week, and we will be brewing 3 special beers for the week as well.

PAKTECH 6-PACK HOLDER RECYCLING
We are going to be participating in a recycling program put on by PakTech, who is the manufacturer of our 6-pack holders. These are currently not recyclable in the commingled recycling, which is a major bummer. So, PakTech implemented a new program where they will take these back and recycle them to be re-purposed! How cool is that?!
We are in the initial stages of rolling the program out on our end, but be on the lookout for blue recycling containers where people can recycle the holders. We will be offering this service to anyone who wants to bring in their holders to recycle so we can maximize the number that do get recycled. Even our distribution accounts will benefit! This flyer will be put up in conspicuous locations so you can read about the program and answer any questions our customers may have. A formal announcement in the form of a HotSchedules message and a social media posting will come out later this week.

Please recycle any flats that look subpar though. There is no need to try and reuse bad looking ones!

Haakan and Dakota T. are putting together an order for Block 15 disc golf discs! Each disc will have Block 15 artwork on it, so they’ll be dope AF. The discs are coming from Dynamic Discs, and will be roughly $14 a piece, depending on how many people show interest. The type of disc is called the "Maverick" and the description and specs can be found on their web site.

Bourbon Month begins February 1st at the Pub and Caves! We will be debuting our new barrel selection from Buffalo Trace, along with a rad lineup of bourbons hand-picked by Alex Goodwin. There will be events galore, including the Caves Bourbon Dinner, a dine-out/tasting with 4 Spirits at the pub, a bottle release brunch, and an ice cream social. Get ready to drink some bourbon!

BOURBON MONTH BOTTLE RELEASE PREORDER
The sign-up for your Bourbon Month Bottle Release preorders is now LIVE! Preorder submissions are open now through Wednesday, January 30th at 6pm, at which point the form will close and employees will no longer be able to submit pre-orders. This preorder only secures your bottle order so you can pick them up early - you will still be charged the normal amount plus your 25% discount regardless of when you pick up your bottles (with your Friday preorder or later on in the weekend). Please ask a manager if you have questions!
Employees are also able to preorder beautiful Super Nebula glasses along with their bottles & cans! These glasses are DOPE AF so get your order in and make sure to pick them up early!

The Facebook event has a synopsis of what the play is about. The point of this “preview show” is to try and replicate the conditions of a sold out show. It can also give the cast and crew a jumpstart of energy before the show even officially opens on February 1st! You and your family and friends are invited, and there is no admission charged. It will run like a normal performance as well - with full concessions and an intermission.

Beef brisket sauerbraten, with scalloped German potato salad, and beet sauerkraut - Sauerbraten is a German pot roast that can be prepared with a variety of meats—most often beef, but also from venison, lamb, mutton, pork, and traditionally, horse. Before cooking, the cut of meat is marinated for several days in a mixture of vinegar or wine, water, herbs, spices, and seasonings. Caves’ is made by brining beef brisket in a dark sour ale and then braising. It is served with beet ‘kraut and our take on a warm German potato salad. #YUM

BLOCK 15 GETS RECOGNIZED
Every year, the National Restaurant Association Education Foundation (NRAEF) recognizes outstanding restaurants around the country for outstanding community service, diversity and lifetime achievement. National awards are given to restaurants that are exceptional in community service, and that aim to inspire others with their stories of success.
At the end of last year, Katy applied for this award…and guess what?! Block 15 is one of Oregon’s 2019 state Restaurant Neighbor award winners! We will now compete with other state winners, in addition to other winners from across the country, for one of the prestigious national awards. Three national winners will receive $10,000 to help support the winner’s favorite charity or community project, and winners are flown to Washington D.C. for a presentation dinner.

Bourbon Month begins February 1st at the Pub and Caves! We will be debuting our new barrel selection from Buffalo Trace, along with a rad lineup of bourbons hand-picked by Alex Goodwin. There will be events galore, including the Caves Bourbon Dinner, a dine-out/tasting with 4 Spirits at the pub, a bottle release brunch, and an ice cream social. Get ready to drink some bourbon!

There as been some confusion regarding the policy of 100% off new food items. Below is the finalized policy and verbiage. Please take a moment to familiarize yourself with it, and feel free to ask a manager if you have any questions!
Caves: Employees are eligible to receive a 100% discount on an unmodified, new food menu item during the first week of the menu item's release. The employee is not required to have worked any hours on the day the discount is received. What is required is that the employee critically think about the menu item and provide thoughtful, written feedback.

HOG BREAKDOWN
A few employees will be breaking down 2 whole hogs on Monday, January 14th at 10am at the Tap Room, and anyone who wants to come observe and get their hands dirty helping out are welcome to join. All three of our kitchens will then use various products from the breakdown in different recipes throughout the next few months!
SIP & SPELL @ THE WHITESIDE
We will be pouring beer at the Sip & Spell Adult Spelling Bee at the Whiteside next month on Saturday, February 9th. More specific details will follow as the event gets closer, but just as an FYI we will have coasters to promote the event at both locations. So if someone asks why we have those coasters you can explain to them that we’re the beer pourers!

RESILIENCE IPA
Resilience IPA went on tap yesterday, and we will be donating 100% of it’s sales to the Sierra Nevada Camp Fire Relief Fund to support those impacted by the Camp Fire. We joined Sierra Nevada and independent breweries around the country in supporting the Butte County community by brewing Resilience. Sierra Nevada has put together a cool interactive map showing all the different breweries/tap houses participating! NPR chatted with Sierra Nevada’s CEO Ken Grossman about the program, and you can listen to that interview here.
PRAY FOR SNOW
We are participating in Pray For Snow events in partnership with two local radio stations (NRQ and KZEL). These events will be at the Tap Room on the 2nd Thursday of the month, beginning in November and ending in March. Pray For Snow is a live event focused on snow-based activities (skiing, snowboarding, etc.) with lots of prize giveaways ($20k total in prizes over the five months of events), games, contests, etc. We expect this to bring in a good number of folks new to Block 15 from around the region. Make sure to check out January’s event on Thursday the 10th…you may even win the grand prize! #block15luck
THE CORVALLIS HALF MARATHON & 5K
The Corvallis Half Marathon & 5K is quickly approaching! The 5k is Saturday, April 13th and the Half Marathon is Sunday, April 14th. Block 15 encourages you to participate! In support of this, we will be covering the registration cost of any Caves or Block 15 employee who participates.
You must request, and be approved for, that time off of work by February 28th.
If you would like to register for one of these runs, please check in with your scheduling manager first. Sarah and Laura will be giving Kristen A. a list of all staff members who are approved for that time off. She will then message all approved staff with a code that will allow you to register for free!
Please note this 'offer' is only good for those of you who participate. If you register, but don't participate, you will owe Block 15 the registration fee, so make sure to only sign up if you are committed to running!

We were able to bring 342 donated toys to Doernbecher and Randall’s Children’s Hospital last Saturday 12/22 thanks to the 6th Annual Cameron Merrill’s Legacy Toy Drive! We also purchased items off the nurses’ wish list and stocked the shower area with basic essentials at Doernbecher. THANK YOU for promoting the drive and for helping to brighten the holidays for children and families! If you want to keep the love rolling, Cameron’s family organizes blood drives throughout the year - their Facebook page can update you on upcoming blood drives.

Next weekend is our January bottle release, and with it comes your opportunity to snag some highly anticipated Turbulent Consequence, Cherry Pit bottles (limit 6). As employees you are able to pre-order your allotment of these bottles and pick them up out at our Tap Room on Friday, January 4th from 11:30am to 10pm! To request your allotment, please follow the link below and fill out the requested info. The deadline to fill out this form is Wednesday, January 2nd at 5pm. If you do not pre-order by this date, you will be unable to pick up your allotment on Friday.
*NOTE: You will receive your employee discount of 25% off wether you get your bottles on Friday or later. But to ensure there are enough bottles available on Friday, you must pre-order.

RESILIENCE IPA
Resilience IPA went on tap yesterday, and we will be donating 100% of it’s sales to the Sierra Nevada Camp Fire Relief Fund to support those impacted by the Camp Fire. We joined Sierra Nevada and independent breweries around the country in supporting the Butte County community by brewing Resilience. Sierra Nevada has put together a cool interactive map showing all the different breweries/tap houses participating! NPR chatted with Sierra Nevada’s CEO Ken Grossman about the program, and you can listen to that interview here.
PRAY FOR SNOW
We are participating in Pray For Snow events in partnership with two local radio stations (NRQ and KZEL). These events will be at the Tap Room on the 2nd Thursday of the month, beginning in November and ending in March. Pray For Snow is a live event focused on snow-based activities (skiing, snowboarding, etc.) with lots of prize giveaways ($20k total in prizes over the five months of events), games, contests, etc. We expect this to bring in a good number of folks new to Block 15 from around the region. Make sure to check out January’s event…you may even win the grand prize! #block15luck
THE CORVALLIS HALF MARATHON & 5K
The Corvallis Half Marathon & 5K is quickly approaching! The 5k is Saturday April 14th and the Half Marathon is Sunday April 15th. Block 15 encourages you to participate! In support of this, we will be covering the registration cost of any Caves or Block 15 employee who participates.
You must request, and be approved for, that time off of work by February 28th.
If you would like to register for one of these runs, please check in with your scheduling manager first. Sarah and Laura will be giving Kristen A. a list of all staff members who are approved for that time off. She will then message all approved staff with a code that will allow you to register for free!
Please note this 'offer' is only good for those of you who participate. If you register, but don't participate, you will owe Block 15 the registration fee, so make sure to only sign up if you are committed to running!

We are currently partnering with Corvallis Environmental Center for The People’s Pint tap. The designated beer is Alpha IPA at both the Pub and the Tap Room. On January 1st we will begin partnering with Heartland Humane Society.
We were able to bring 342 donated toys to Doernbecher and Randall’s Children’s Hospital last Saturday, 12/22 thanks to the 6th Annual Cameron Merrill’s Legacy Toy Drive! We also purchased items off the nurses’ wish list and stocked the shower area with basic essentials at Doernbecher. THANK YOU for promoting the drive and for helping to brighten the holidays for children and families! If you want to keep the love rolling, Cameron’s family organizes blood drives throughout the year - their Facebook page can update you on upcoming blood drives.

WANDERING AENGUS CIDER TASTING & TOUR
Each year, Block 15 takes a quick day trip up to Salem to tour the Wandering Aengus Cider facility for a fun tour and tasting of some bourbon barrel aged cider that will eventually be blended into the Blind Tiger cider that we offer during Bourbon Month in February. This year's tour will take place on Monday, January 7th at 11am (we will leave Corvallis at 10am) but do not fret, we will be back in town with plenty of time to prepare for the Holiday Party later that day! Porcini and Beef Stroganoff
GOAL: Tender, yet firm radiator pasta tossed and topped with savory beef, mushroom and sour cream stew.
KEYS TO SUCCESS:
Only drop pasta in water until JUST hot. We want the pasta to hold its structure. With simmering pasta water, pasta only needs 45 seconds
Since we are hot holding the stroganoff, monitor the integrity of the sauce. If it gets too thick, breaks or seems thin PLEASE see Sarah, Joe, Paul or Haakan.
Drop 1 portion of Radiatore into pasta water. DO RIGHT BEFORE SELLING TICKET
After 45 seconds place in a metal bowl and toss with 1-6oz ladle of stroganoff. Place in a pasta bowl and place in window to be topped with another 6oz ladles of stroganoff sauce
Garnish with 1T each parsley & paprika oils and 2 pieces g-bread
Festivus Burger
GOAL: Perfectly cooked burger with proper seasoning, sweet grilled onions and melted sharp white cheddar on a perfectly toasted bun
KEYS TO SUCCESS:
Make sure you have even distribution of mayo and ketchup on the bottom bun

Apricot Chicken Melt
GOAL-Tender chicken and smoky ham melded together with our pepper jelly served on chewy yet toasted house baked bread.
KEYS TO SUCCESS:
Make sure you drop chicken as late as possible. It should not be on the grill more than 3-4 minutes to prevent our awesome chicken from getting dry!
Hit the chicken with the pepper jelly while on the grill so it cooks into it and starts to lightly caramelize. Remember to clean that part of your grill after you swing it!
Slice and heat 3 banh bread.
Drop one 5oz portion of grilled chicken and 1- 2oz portion of ham and divide into 3 even portions
Set goes from bottom to top (per bun):

The Corvallis Half Marathon & 5K is quickly approaching! The 5k is Saturday April 14th and the Half Marathon is Sunday April 15th. Block 15 encourages you to participate! In support of this, we will be covering the registration cost of any Caves or Block 15 employee who participates.
You must request, and be approved for, that time off of work by February 28th.
If you would like to register for one of these runs, please check in with your scheduling manager first. Sarah and Laura will be giving Kristen A. a list of all staff members who are approved for that time off. She will then message all approved staff with a code that will allow you to register for free!

We are participating in Pray For Snow events in partnership with two local radio stations (NRQ and KZEL). OIL BIN CLEANING PROCEDURE
This will be a pub BOH scheduled task the 3rd week of every month. The purpose of this task is to keep the oil bin area clean and tidy!
What you will need:
5 gallon bucket of dish soapy hot water (2T dish soap to 1 gallon hot water)
Deck Brush
Long hose from the top of the stairs
Wide Putty Knife
Hand Scrub Brush
Rags
Gloves
BINS: Use the hand scrub brush and soapy water to first clean the tops of the actual bins themselves. Scrub off as much grease as you can! Rinse using hot water from the hose. Use rags to wipe away excess debris.
GROUND: First, pick up any garbage or large debris in the area around the oil bins. Use deck brush to scrub away any grease spills around oil bins. Get in corners and crevices. Make sure you move any buckets out of the way to get all surfaces. Rinse area with hot water from the hose.
Clean up supplies and put hose away!

Our second annual Block Friday event will be held this Black Friday (November 23). In addition to the release of our first Block Friday blend in 500mL bottles, we will also be selling limited quantities of rare beers from our cellar, offering 20% off most retail, and slinging a dope food special. Block Friday will only take place at the Tap Room from 11:30am - 10pm.

THE PEOPLE’S PINT - NOVEMBER
We are currently partnering with Samaritan Veterans Outreach for The People’s Pint Tap. The designated beer is Autumn Farmhouse at the pub and Gloria! at the tap room. Last month’s we raised over $650 for Corvallis Mountain Rescue Unit.

Brewer’s Provision for 11/15: Matt Williams’ Puerco Pibil Tacos. Puerco Pibil is spiced pork roasted in banana leaves. Beer pairing is TBD.
The Southwest Burger order of toppings has changed. The set from bottom to top will now be:
