WHAT’S THE DEAL WITH AUDACITY OF OPACITY?!
As most of you know, we’re releasing The Audacity of Opacity (AoP) this weekend in draft and cans. This beer, as it says on the label, is about “reclaiming clarity in the American IPA,” but here’s a little background on what that actually means:
There is a major association with visual haze and the term “juicy,” so much so that people think there can’t be one without the other. Generally, juicy should mean fruity hop flavor, soft bitterness, and a full, soft mouthfeel. With AoP we’ve made an IPA that has those characteristics but breaks the visual haze connection.
The source of haze in IPA’s can be from a number of things: the amount of proteins in the beer, the types of grains used, the type of yeast used, or the types/styles of hops used (oils vs. pellets vs. whole). Any one of these things single-handedly may not create haze, but the combination of two or more could. This means there’s lots of variability and iterations to experiment with to either create haze or not.
In recent years, hazy IPA’s have been getting their haze on from lots of oats and wheat in the grist profile. These two types of grains create a lot of haze, and contribute to that soft, somewhat thick mouthfeel. For AoP, we used flaked barley, which is a grain that is less likely to produce any sort of haze but still gives good body to the beer and keeps those juicy characteristics.

Our current 2 ½ bullets are no longer available so we will be switching what our bullet usage is!
Please follow the plating below from now on. Thank you!
Use 1 ½ oz flat bullets for:
All sides of dressings and dipping sauces EXCEPT rosemary vinegar and any special thin vinaigrette dressing.
Fill flat bullets with 1oz of sauce. It should be ⅔ full.
Use 3 ¼ oz (our old style) bullets for:
Rosemary vinaigrette and any other thin special dressing - Fill ½ way.
Blue cheese dressing for 3 wings - Fill ¾ full
Salsa - FIll to the brim.
