ALL: 

  •  New outside furniture in the grass area. Make sure they stay clean and in good shape. They do not need to be moved or locked up at night. With that, tables 34 and 35 are put away for the time being so the tables are 31-36. 

  • We have pulled Airlie Rosé for the time being to highlight our Rosé Shooting Star! Keep the Shooting star in the main cooler as the lemonade fridge isn’t reliable. 

  • The time deadline for online Keg/Corni orders has changed from 5pm to 3pm on Thursdays. Please make sure to let folks know!

  • FOCUS POINT: Wiping down tables! Make sure all tables inside and outside (high bar too) are getting wiped down as well as everything in the kitchen, tables, sinks, make line, etc. It will help keep the flies away as well so please be diligent about it!

FOH: 

  • Please make sure all umbrellas are out every morning!

  • Keep up accurately ringing in tickets, double check the side and any mods to keep from having to refire items/comping items. 

  • With the way the panna cotta is served we cannot do it to-go, it is an in house dessert only!

  • FOCUS POINT: Water stations! With the warmer weather and busy weekends, make sure to check the water stations and refill as necessary and keep them looking nice and stocked with cups!

BOH:

  • Please start portioning sous vide chicken for the piquillo pepper sandwich at 4.5oz, and chopping some if needed for add on, they are separated on the prep list now.  We can try patty papers and bring in some of the roll top plastic bags if that doesn't work

  • The bread doesn’t have to be put away each evening because we are flying through it!  That being said, please be sure to close the bags at night so it doesn't dry out.

  • FOCUS POINT:  Chips! Tortilla and potato. Let's be sure they are getting the right color, seasoning, and being stored in a sealed container. Have your sidekicks give them a try when making a new batch as well as in the morning to ensure freshness
