ALL: 

  • Just a reminder that we are out of the mustard aioli and spicy mayo. 

  • Swapping out the Rosemary Feta Brulee this Friday with the Clam Dip and Chips. With that we will have potato chips as a side option.

  • In an effort to separate the chemicals and food in the closet, some stuff moved to the shelf outside the brewers bathroom like simple green, auto chlor chemicals, etc.  If you are looking for something that used to be in the closet, there is good chance it is over in the other building now.

  • FOCUS POINT: Cleaning Lists! Make sure you are checking both the weekly and monthly cleaning lists when it is slow, during shift change, etc. and initial the ones you have completed!  There is always something that can be cleaned!

FOH: 

  • We have 4 new umbrellas and umbrella stands for the tables out in the grass. They can be moved around as needed. They should be put out every morning that it is forecasted to be sunny and put away every night. The stands can stay under the tables but the umbrellas need to be put by the bbq/heaters area.

  • Make sure you sign off on plant watering!

  • Make sure to often pull out the clean/dirty glassware rack holders (metal shelving) and sweep and mop under there. Broken glass, store n pours, water cups, etc. tend to get lost under there and need to be cleaned regularly!

  • FOCUS POINT: Triple checking tickets! When running food, check for all mods, sauces, etc. Take a second to make sure you are running the correct items to the correct table and have all the proper silverware, napkins, etc. The more accurate we are the less damage control and food waste we will have to do!

BOH:

  • Make sure during rushes we are still using correct and consistent fry portioning!

  • Be in the know on clam dip recipe and plating for Friday launch.

  • FOCUS POINT:  Salad Presentation/Portioning! Make sure all ingredients are segmented, not just thrown on, properly dressed, right lettuce portions, and garnished nicely! It is salad season so they should look tasty!

  • Tracking; Bier cheese again! Still need to scrape containers, and make sure it is a nice texture/consistency cheese!
