Please place cardboard recycling in the large cardboard dumpster inside the corral, instead of the cans to save space in them.
FOCUS POINT: Closing! When closing please make sure to be thorough, don’t rush, and double check that if you signed off on it then it is actually done! Remember that there must always be at least 2 people when closing and to wait for one another.
FOH:
New lemonade/FVL flavor and margarita this Friday: Passionfruit! We will still run cherry limeade until we run out.
The rockers are out of commission until further notice.
Please make sure all packaged beer, limes/lemons, iced tea, etc all get put in their appropriate fridges at night.
FOCUS POINT: Roles/Managing slow lulls! During busy times and weekends establish roles and communicate to stay efficient. During slower times make sure to not just stand behind the bar, find cleaning projects, offer help to the kitchen, or even phase if it feels appropriate.
BOH:
Openers: please make sure the fryers are centered underneath their emergency sprayers!
When doing salsa prep, please do not add the oil and salt until roasting, it draws out moisture from the veggies as it sits.
When smoking beets, please place them directly on the racks instead of putting a sheet pan in the smoker. The sheet pans will never recover from an afternoon in the smoker. The smoker must be cleaned and covered after each use.
FOCUS POINT: Dishes!! When doing dishes, make sure to spray every dish before sending through the wash and check them before you put them away. Spin dip, enchilada, and feta dip dishes need the burnt cheese removed. Any container with sous vide chicken will have a residue that needs to be scrubbed off. All pans and lids from the soup warmers, whether they had food in them or not need to be washed. Remove old tape from fifos when washing or filling them.
Tracking; Bier cheese numbers didn’t look the best, at a loss of 13.4%. Doing it again. Make sure to watch the consistency and scrape the containers!
