ALL:

  • FOCUS POINT: Keep kickin’ butt!! Keep being efficient with labor and go out of your comfort zone. You all are doing great!!

FOH: 

  • Keep up the hospitality and really push packaged beer the next few weeks!

  • Reminder: The CO2 in the walk-in needs to be turned off every night. It is the master red switch on the wall behind the where the backup bottles live in the walk-in and there is a cardboard sign pointing at it. If you have questions about it, ask a manager!

  • Reminder: The back up bank MUST be counted every night and every morning. Be thorough and accurate!

  • FOCUS POINT: Diligent walkthroughs! Every night when closing you must do a thorough walkthrough of the kitchen (check all temps, burners are off, doors locked, etc.) and both buildings. Every door must be locked and triple checked before arming/leaving the building. 

BOH:

  • Keep up not over prepping, only prep what you need to keep from wasting!

  • FOCUS POINT: Stay busy! When it is slow, find a cleaning project to do instead of extra prep.

  • Tracking: Smoked chicken was perfect! Doing it again though as there wasn’t much data
