ALL:

  • FOCUS POINT: Stay Healthy!! It’s that time of year… Flu season, traveling, cold weather, etc. Please take care of yourself and stay home if you feel unwell! Make sure to revisit call out/sick procedures if you need to. 

FOH: 

  • Let’s make sure the new beer togo cooler is always stocked and labels rotated so they look nice and easy to read. 

  • Reminder: The CO2 in the walk-in needs to be turned off every night. It is the master red switch on the wall behind the where the backup bottles live in the walk-in and there is a cardboard sign pointing at it. If you have questions about it, ask a manager!

  • Reminder: The back up bank MUST be counted every night and every morning. Be thorough and accurate!

  • FOCUS POINT: Upselling! During our slow season lets try to upsell every customer by offering package beer, merch, another round of drinks when checking in, desserts, etc. Try to maximize the opportunity to get more sales and tips!

BOH:

  • New menu items and dessert coming this week make sure you know all the procedures and plating for them!

  • FOCUS POINT: Checking prep list pars! Make sure to double check prep list pars as some have changed to ½ batches. If it is slow and there isn’t much to do please go and organize the food area of the walk-in or do cleaning projects instead of prepping more items.

  • Tracking: Sprouts and squash- didn’t have numbers this week. Doing it again. Weigh them out and track on the waste log if needed!
