ALL:

  • Keep Moving! When times are slow let’s make sure we're finding things to do to stay busy and utilize your time well! Daily and Monthly cleaning lists are an easy way to find things to be done.

FOH:

  • New cocktail James and the Giant Peach to replace Red Berry Painkiller on Friday!

  • Let’s make sure the pitcher with tape on it on the second shelf of the dirty dish rack that catches liquid gets emptied and washed every night.

  • Please note that bodily fluid/gross things clean up is everyone’s job here since there isn’t always a manager around like at the pub. If you do clean up something please put it in the maintenance log with your name and if you need a refresher on what to do there is a sheet on the mop closet door that explains the procedures.

  • FOCUS POINT: Clean glassware and proper pours! Please double check glasses before pouring to make sure they are clean and do not have lip marks, seeds, etc. on them. If there has been a long gap in dishwasher runs, turn on the hot water in the hand wash sink for a minute to help refresh the hot water to the dishwasher (they are connected) as that should help with marks and make sure the pour is up to par before handing it off.

BOH:

  • FOCUS POINT: Line cleanliness again! Make sure knives, cutting boards, gloves, plates, etc are clean and up to standards. Have a dedicated knife and cutting board next to the line for ruebens only and an extra rag for wiping to keep everything clean.

  • Tracking: Bahn Mi Pork was slightly under portioned. Tracking again. Make sure you are using the 2oz scoop!
