  • We will be getting white peach flavor for lemonade and fruit vodka lemonade along with a new cocktail James and the Giant Peach to replace Red Berry Painkiller on Friday

  • When 86’ing items in toast, make sure you look in all places it could be, kids items (food and drink), side option, appetizer, protein add-on, etc. so it looks consistent and saves you from getting a ticket with an out of stock item.

  • Let’s make sure we are turning off the propane heaters when no one is sitting by them to help preserve propane.

  • Let’s make sure Gloria! 10oz pours are still coming in the same dimple glass with beer up to the first line/dimple from the bottom, not a regular 10oz glass. 

  1. FOCUS POINT: Hospitality! Let’s make sure we are really checking in with customers throughout their dining experience. It should be easy to do when slow but also make sure those touches are happening when we are busy as well. It only takes a minute to do a lap of everyone.

BOH:

  • FOCUS POINT: Line cleanliness! Make sure knives, cutting boards, gloves, plates, etc are clean and up to standards. Ex: If you cut a beet sandwich make sure you clean the knife, counter, etc before doing the next item. An extra rag to wipe quickly in between helps a lot!

  • New Buffalo hot dog replacing pimento jalapeno on Wednesday, be up to date on specs!

  • Tracking: Smoked chicken still looked almost perfect… Great job! Moving on to tracking Bahn Mi Pork.
