Again - do not leave standing water when mopping!!!!! If you notice puddling, dry mop it up, or use the squeegee to get it to a drain!
FOH:
Let’s keep a dedicated deep 1/3rd pan for ice - closers, please wash it with everything else at the bar and make sure it stays up front!
When defrosting the fridge, make sure to put a hotel pan underneath it so it catches all the water!
We are going to start requiring a bathroom cleaning checklist to be filled out every morning at open. Please make sure you are hitting every item. Also, like at the Pub, bathroom cleaning should take around 30 minutes total - so at least 15 minutes for each bathroom. Don’t skip steps!
BOH:
Make sure to seal any sort of bag that will go in the freezer COMPLETELY. We don’t want freezer burn!
