FOH:

  • Napkin awareness!!!! DO NOT take a big stack! Take 1 per person, or 2 if they are getting something messy like the chopped pork, burger, etc. Lets try not to waste them. 

  • Make sure to clean the men’s urinal thoroughly! Clean the whole frame - even at the top underneath the flusher. That gets really nasty buildup and contributes to the smell. 

BOH:

  • Drain mushrooms after they've been on marinade for 24 hours.

  • Make sure to measure brisket, and weigh periodically to make sure you’re staying on track! 

  • Put cherry tomatoes in the fridge at the end of the evening.
