  • Here is the run-down for all things Sports coming at us: Tuesday-Friday OSAA Boys/Girls High School State Basketball Tournament at Gill Coliseum, Tuesday OSU Baseball vs San Diego, Friday-Sunday OSU Baseball Vs Washington State, & Saturday we also have OSU Gymnastics Vs Utah… Be Ready!! 

  • Be Aware: DAYLIGHT SAVINGS is this weekend, Sunday March 12th… Springing it forward an hour!! Don’t forget to change your clocks ahead an hour aka keep that phone charged up!!   

  • Cosmic Cold Brew Release Party will be taking place at Tried & True Cafe on Friday, and will be on draft at both locations on Friday.  Also, just FYI, in case guests ask, Cosmic is out in the wild in Portland as of today but advertise the release in town this Friday!!

  • The Albacore Tuna Sandwich is still on its way out, but the Italian Sandwich will be taking its place once 86’d.       

  • FOCUS POINT: Keep your head up! We are anticipating a busy week & busier times are only going to continue, so please keep your head up and remember to take deep breaths & communicate. Remember that you’ve got this and continue to keep killing it… you are all an amazing team!!!  

       FOH:  

  • Coco Bells must not be left out overnight, so let’s make sure that they get put away at night. Food Runners, this task will be added to your shift change list. 

  • Beer Restock: be sure to be facing cans correctly. One can should have the name of the beer facing & the other should be the picture of the can facing, and they should all be in unison.   

  • FOCUS POINT:  Appropriate Time for Tasks Awareness: Shift Change should not be completed before lunch, the server stations in the kitchen shouldn’t be broken down before 9:30 pm, and no rolling up floor matts too soon. 

       BOH:

  • As we move away from using gloves, hand washing will be extremely important (as always), as well as using scoops & spoons. 

  • Please watch your Queso Fresco portions & check the procedures for enchiladas (2 TBLs = ½ bullet) & Mesa Salad (1 oz = full bullet)! 

  • Be sure to rinse vegetables & change water to keep our vegetables fresh & servable–slimy carrots & celery slimy is yuck. Also let’s be sure to keep our garnishes clean & looking fresh as well.

  • When smoking multiple batches of chicken let's be sure to change out the wood each time. Basically for each batch of something new going into the smoker the wood needs to be changed out.

  • Prep Focus: When choosing a project, please prioritize things that need to cook & cool first. Also please make sure to move these items in the walk-in within 30 minutes. This helps our day run more efficiently and ensures that items are cool when it's time to back them out.     

  • FOCUS POINT: Overall Cleanliness awareness! Handwashing, station cleanliness, apron cleanliness, more handwashing. Also, please continue to check the cleanliness of dishes before they go into the window to sell. If greasy from handling, give them a wipe down.
