ALL:   

  • Here is the run-down for OSU Sports coming at us: Thursday Men’s basketball @ 6pm VS. Stanford & Saturday Men’s basketball @ 5 pm VS California… That's all we have on the roster as of current, but we can see some travelers so be ready to hustle!

  • Red Beans & Rice is 86’d for the season, and the Porkstrami Sandwich will be replacing the Maple Bacon Bourbon Patty Melt this Wednesday 3/1/23!!

  • The Albacore Tuna Sandwich is also on its way out soon, Cody will be running a Sandwich Special this weekend that will be replacing the tuna sandwich so please give Cody feedback. 

  • Cups and glassware should not be bussed to the dishpit–they go straight to the server bus station. NO STRAWS, LEMONS, ICE from cups should be found in the sinks in the dishpit area!

  • Please keep chats in the kitchen down to a minimum, especially in the fryer/FOH window area. Conversations can be a distraction to those calling tickets on the line & for those needing to make call backs.      

  • FOCUS POINT: Safety Consciousness Awareness: Be sure to be calling Corner, Hot, Sharp, and Behind You’s! Let’s keep each other safe and be aware of where we are on the floor by communicating with one another!      

       FOH:  

  • Please keep an eye on the Coco Bells before serving to see if they seem too dry. If in question, check with the Kitchen Lead or Manager on Duty.

  • Servers, there will be list updates for openers & closers. Be sure to keep your eyes open for changes.

  • When phased please ask the prep kitchen to borrow their shop vac to help vacuum up the leaky water in the break room near the To-Go Bags until we can get that leaky wall fixed.  

  • FOCUS POINT:  Proper Bussing Awareness: Be sure to be scraping dishes before placing into bus tubs, be sure to dumb sauces into the the trash before placing into the silverware tub, & be sure to be scraping all toothpicks off plates as well–toothpicks are terrible for the dish drain! Also be sure to be bussing glassware to the proper location! Though, it might be convenient to bus glassware & cups to the dish pit on the FOH end, it is not convenient on the BOH end by having straws, lemons, and lots of ice in the sink. Be sure to bus all cups & glassware to the bus station. 

       BOH:

  • Dishwashers please be proactive when you have time to check the server bus station upstairs & the bus station in the kitchen. This will help you stay on top of utensils, cups, and no dropped cycles.

  • Chicken sausage & meatballs will now be stored in metal ⅓ pans.

  • Openers, the right hand fryer “Dean” should be turned to 380 or above in order to get to the goal temp of 350.    

FOCUS POINT: Plating & plate cleanliness awareness! Be sure to check the cleanliness of dishes before they go into the window to sell. If greasy from handling, give them a wipe down. Plating & plate cleanliness helps to give the wow factor to all of our guests' experience at Block 15!
