ALL: 

  • New cocktails launch this Friday, 3/12 along with Apricot as our new seasonal lemonade flavor.

  • You’ll notice orders on the KDS screens now are distinctively colored to let you know that individual orders ticket time. 

  • Just so everyone is on the same page, even though we are opening up for dine in we will not be opening the upstairs portion of the restaurant quite yet. 

  • Good luck this weekend as we open for dine in, remember to have fun! 

FOH: 

  • As we open up for 25% capacity Dine in services this Friday (3/12), lets be aware of the following: 

  • Mind the traffic flow in isles to properly promote social distancing as we will start having a larger number of people inside than we are used to. 

  • Sarah will be posting a list of quick fire appetizers that should take 10 or less minutes to hit the table. This will be especially helpful as we get busier with dine in for suggestion items if ticket times are already high. 

  • As we pivot in our service style once again, be diligent about practicing good communication and patience as we are all getting back in the swing of things! 

BOH

  • As we gear up for dine in, we want to empower you all to feel proud of the awesome food you're putting in the window. To keep our staff safe and practice social distancing, we are limiting the amount of staff in the kitchen and therefore this may lead to higher ticket times. When this does happen, keep an open line of communication with your FOH staff so they can communicate properly with their tables. 

  • Please start using a tall bullet for measuring Sharp Cheddar for Mac & Cheese as we have accidentally been under portioning, 2 tall bullets full equals two ounces which is the proper portion. 

  • Also regarding bullets, we have noticed a lot of wasted sauce lately. Let's get back in the habit of using the short bullets for all sauces/ dressings minus a few exceptions like Rosemary Balsamic which is too liquidy to be contained in the short bullet. 

  • Openers, remember to fill out your fryer schedule. Reach out to Patrick if you have any questions on how to complete it. 

  • Keep stocking Smoked Cheddar on the line until it runs out as it can be used for an add oncheese even after the Maple Bourbon Bacon Burger is gone.
