ALL:

  • ANYTIME you are touching food directly you MUST be wearing gloves.

  • When checking an item before sending it out, for example a Burger, please use a butter knife to lift the bun to make sure the proper fixings are on there, not your bare hands, even if you know they are clean. Furthermore, do not touch sauce FIFO’s or anything on the line without wearing clean gloves.

  • Releasing Turbulent Consequence Illumination & Black is Beautiful this Friday on Draft at the Pub & Taproom. Check out the week’s Brewsletter for more information about how we are donating 100% of the Black is Beautiful proceeds and distributing the profits to a few different branches of the NAACP fund.

  • We have Charlie’s Delight Blueberry & Blackberry Pavlova now is 16 oz. Cans, ready togo!

  • Again, food feedback is important and we aren’t receiving enough of it. I challenge all of you at the end of ONE shift this week (before Monday Aug. 31st) write positive or negative food feedback about the presentation, taste, etc. you have received before you clock out.

  • Oysters will no longer be available at Caves Monday through Thursday. They are still available Friday through Sunday, as a bonus we are bringing back Oyster Hour from 4PM to 5PM on these days.

  • The chicken in the Chicken & Waffles is changing back to using Thigh meat instead of Breaded tenders.

  • Our Standard Mac will now be served in a Caves Soup bowl rather than a Pasta bowl unless it has added protein on top.

  • TAKE OLD LABELS OFF OF EVERYTHING, EVERYTIME. If necessary, we will start following up with the person that has their initials on the newest label.

FOH:

  • To be clear, it is okay to take menus off of tables without gloves on, please just wash your hands after. To prevent them becoming a placemat, please be diligent about taking them as customers are done ordering (you’re still welcome to wear gloves when you retrieve them if it makes you more comfortable).

  • Let’s get back in the habit of checking the cleanliness of the Brew Bar and Game Room often, we want these to reflect the same level of sanitation standards we use for the rest of the restaurant.

  • Consider bringing a tray more often to tables, especially if you know a round of glassware could be picked up. Please feel free to encourage the customers to place the glassware directly on your tray (if you are comfortable with this, its an easy way to pre-buss when you don’t already have gloves on).

  • Dirty glassware being bussed to the bar can still directly go on top of the dishwasher OR on the tray left on the bar @ the B7 area (delegated as a dirty tray only, please do not use grab this tray to take drinks out). This will promote a clean and more organized bar.  On this note, Buss tulip glasses directly to bar as they need to be rinsed immediately to prevent the clouding of the glassware so quickly.

  • We may need to get creative when picking lists, every time someone is phasing out please make sure to address if the lists are picked and delegate restocking a few items to that person before they go. Furthermore, Take-out/ Delivery folks as you are making your rounds to see if you can help, please prioritize checking these yourself as you know where they live!

BOH:

  • Please be checking the consistency of the Bier Cheese and Mac Sauce every time you take temps and other down times to make sure we are serving these items up to par. 

  • As a reminder to Prep folk, prioritizing certain items on your list first such as Cold Fry chicken is important so the Line Opener can achieve having these items done before we open at 3PM so the fryers can be back up to tempt for normal service.

  • Also, when prepping food, the item must ALWAYS be taste tested/ checked by ANOTHER employee before being signed off on.

  • 15 minutes will be added to the beginning of opening shifts that you have to clean the grease trap. The expectation is this is always done first to let the smell dissipate before we open.

  • Ally cleanliness is still a priority and should be checked nightly. After rinsing mats, (please shake food debris off inside as it can be swept up) be thorough about rinsing the ground towards the drain.
