FOH:

  • If you are closing out a customers tab and they use cash, please remember to put the payment due in the til and the cash tip in the tip jar kept behind the bar. Take out/ delivery tips can also go in this jar as they are all pooled together and split by hours worked. 

BOH:

  • For consistency purposes, let's weigh/ measure ingredients that go on the new or recently changed menu items. For example, the cabbage that goes on the Fried Chicken sandwich. Furthermore, be careful not to overcook the Fried Chicken Sandwich on the line as it is already thoroughly cooked by sous vide.

  • We got a sharp new bread knife we would like to keep nice, so after it gets cleaned/dried each night please put it back in the box under the microwave at the expo station.

  • Please start saving the ends of ciabatta bread for croutons!
