ALL:

  • Family weekend, Veteran’s Day, and 4Spirits festival this weekend, be ready for it to be pretty busy!

  • FOCUS POINT: Monitoring Labor! With the weather turning and our slower season approaching, be mindful of labor and if there aren’t a lot of projects, cleaning, etc. to do then go ahead and phase earlier but keep in mind events, weekends, etc. to know when to stay staffed up. 

FOH: 

  • When hosting make sure to slow down and engage with customers, you are their first impression so please make it a welcoming positive one.

  • When customers are ordering make sure to point out the self-serve water station.

  • When closing on weekdays remember to check in with Distro in the back building before leaving and to lock all the doors and turn lights off but do not set the alarm.

  • FOCUS POINT: Going above and beyond!! Really focus on checking in with every guest, offering to grab another beer or drink (grab a handheld if they don’t have an open tab), pre-bussing, offering to-go boxes, more sauce, etc. We need to be over the top with positive and genuine hospitality for every customer.

BOH:

  • Make sure the bread goes into the walk-in every night!! (Think WWCD: what would Chris do?)

  • FOCUS POINT: Freshness and no over prepping again! Continue to check the freshness of fried items daily (wontons, chips, croutons, etc) and only make what you think you’ll need of prepped items (beans, salsa, etc.) and make sure to use up older date items first!

  • Tracking: Tempeh was a little off… 7% loss. Doing it again! Make sure to waste log!
