ALL: 

  • 3 more bar seats are coming back Wed. 4/13! This means the bus station, water station, and drink well area will be moved. 

  • Potato Chips will be an option to have as a side instead of fries, salad, etc. 

  • We still have burger sauce as a dipping option and sub for mayo on burgers.

  • Food credit reminder! >4 hours 20%, 4-8 hours 50%, 8+ hours 70%! Also, no credits can be applied to kid food menu items. 

  • FOCUS POINT: With more bar seats and the water station moving right next to the window let’s make sure we are aware of the volume and conversations we are having in the kitchen/behind the bar. 

FOH: 

  • On Fri. and Sat. nights, we will run with 5 bodies as it is getting busier and nicer. Don’t phase just because there is a short lull in between rushes. 

  • Please brush up on the “How to talk to parents and unruly kids” write up as it is getting nicer and busier out. Be polite but firm with parents/kids and make sure all people working are told when you have those conversations to stay on the same page. 

  • FOCUS POINT: Bar awareness! With new bar seats, let’s continue to make sure we are scanning and touching base with all bar folks often. They should be given the same if not more attention than those waiting in line to order. Communicate so everyone knows if they need to check in with bar guests or not. 

BOH:

  • FOCUS POINT: Food stacking order again! Keep the main walk-in and reach-in organized and everything in the right places so it is easy to find!

  • Tracking: Chopped pork again! 10% loss last week. Try to weigh out as best you can!FOCUS POINT: Food stacking order! When putting away items in the walk-in or reach in please make sure everything is being put back in the right spot to make it easy to find again. Remember that if the meat is cooked it can go above other things but if raw then cannot. Stay consistent with where things go!

  • Tracking: Chopped pork again! Make sure it is being weighed out and properly portioned and tracked!
