ALL:    

  • Here is the run-down for all things coming at us: it's looking like a quiet week ahead with no sports, but Memorial Day Weekend is this upcoming weekend! 

  • Keep Ice Bin lids closed. With the hotter weather let’s be sure to keep the ice bins closed to help assist the ice machine from working over time. Keeping the bins closed is also important for sanitary reasons—clean ice is the best ice!  

  • FOCUS POINT: Teamwork Awareness! With graduation weekend on the horizon & more busy days ahead it is important that we work together and communicate. Let’s be sure to communicate 86’d items, call backs on the line, servers communicate with the hosts what tables are clean, hosts be sure to communicate with the kitchen how many seats you have sat-don’t forget to mention partial groups, let’s communicate if you need any assistance, we are a team and we work together! Communicate, communicate, communicate & be sure to be checking out with everyone!  

 FOH:

  • The corral and hanging baskets are now hooked up to the drip system yay! However, the hanging baskets do hold some excess water and they continue to drip onto the 100's. Openers please carefully shake the baskets to release the excess water, so that we won't have to worry about guests getting dripped on throughout the day.

  • Hosts/Food Runners: Sarah's parents replanted the big flower pots along 3rd Street, so be sure to water these daily & follow the plant watering guideline sheet. Hosts/Food Runners also be sure that we are checking this off our shift change lists.  

  • Let’s continue pre-bussing as this is a major hospitality point, but it also assists the dishwashers & helps them stay ahead of the flow of dishes rather than running out of clean dishes for service. Pre-bussing also assists in faster table resets so we can decrease our wait times. Pre-bussing needs to be getting done at every table, every single time - especially with busier summer times coming up.  

  • Please be aware of bar service, and please don’t shout at bartenders as they are helping bar customers. If you need immediate assistance feel free to utilize a Lead Server or the Float (if not also assisting bar customers). Also please be aware of how many bodies are behind the bar before going back there as it is a small space & the bar can get quite busy. 

  • FOCUS POINT: Plant Watering Awareness!! With the drip system just being set up it's great to keep all eyes on the plants to be sure that the plants in the corral & the hanging baskets are getting watered accordingly–if in doubt check the soil. Please communicate with the manager on duty if any plants seem to be getting missed or if they look like they may be getting too much water so that we can make adjustments to the system. Also Hosts be sure to sign off on the Watering Guide for the 3rd Street planter boxes daily–night Hosts if in doubt check the soil. Basic motto for all Indoor/Outdoor plants = if in doubt check the soil!  

  BOH:

  • Please make sure when plating the new quinoa salad, that we are taking a moment to make sure the asparagus is visible atop the salad when plating… It says it on the procedure, but let's get eyes on it to make sure it's happening!

  • When pulling the trash from the fryer station please don’t pull it out from the side the KDS is on, please pull it from the line side so it will not hit everything that is plugged into that outlet.

  • The empty bread boxes should be stacked in dry storage rather than willy-nilly next to the full boxes. It's fine if you leave one or two when it's busy, just make sure they're put away at the end of the night.

  • Let’s make sure to thoroughly clean anything that’s been on the burners (saute pans, soup pots, mac pots) so we don’t get those black smudges transferring all over. Use Dish Soap! If you see any black smudges on clean spatulas, containers, etc., please take a sec to wash them with soap as well.

  • FOCUS POINT: Upstock & Restocking Awareness!! Upstocking & restocking during slower times will only make us more successful during busier times.
