  • Here is the run-down for all things BUSY coming at us: FRI-SUN OSU Family Weekend, FRI-SUN OSU Baseball & FRI-SUN OSU Softball games… Be Ready for some action, brace for impact, communicate, & remember to breathe!!

  • With the busy weekend ahead, we will be running with a modified Game Day menu, so please check your Hotschedule messages & read the Brewsletter for more updates prior to your shift.

  • Let’s continue keeping an eye on the Bier Cheese consistency. It should be velvety and pourable, not thick & paste-like. If you see that it’s getting too thick, please thin it out to proper consistency. If unsure how to do this ask a Kitchen Lead/Lead/Float.  

  • FOCUS POINT: Get ready for a busy weekend! Review Family Weekend Menu changes, drink lots of water, communicate with your team, and make sure to take breaks when you need to! We will be busy, but your health is more important!


       FOH:  

  • With the nicer weather on the horizon, it will be tempting to prop the doors open to let in some sunshine. If it is warmer outside than it is inside, we should be keeping the doors closed to keep the A/C system from over working–this leads to condensation building up, causing water to drop from the HVAC along the ceiling (big black vent). As summer progresses, we will also want to keep the doors closed to prevent flies/mosquitoes and other pests from coming inside. Check in with a manager before propping doors!

  • Please don't put writing tools in the same cups as our to-go utensils. It's icky.

  • Let’s not leave high chairs by the brewers bar–they live upstairs only when not in use. We had someone with a wheelchair struggling to get through that space as it was in the way. While people don’t have wheelchairs using that hallway often, we want to make sure it remains accessible to people with disabilities or families with strollers.

  • FOCUS POINT: Breaking Down Boxes Awareness!! When doing a restock and the box is empty– break it down. When doing restock and there is only 1 item left in the box, take that item out of the box, place it on the shelf next to similar items & then break down that box. Please don’t leave work for other people. 

      BOH:

  • Please label any leftover Sunday chicken that comes down to the walk-in Sunday evening, just like you would with any other project going down to prep.

  • Closers: if unaware how or what to clean on the back of the grill check in with a BOH MNGR

  • When pulling turkey out of the freezer please put the chubs into a hotel pan with a sheet pan underneath. When the chubs thaw, they leak raw turkey juice, so they need to be in something with sides, but the chub hanging over the side of the hotel pan will drip onto whatever's below it if it doesn't have a sheet pan underneath.

  • FOCUS POINT:End of Shift Tasks Awareness!! Once phased let’s be sure to put your apron in the laundry, get rid of your drink cup & wash it, put your hot pad in your cubby or back in the kitchen for someone else to use, take a load of plastics down, and be sure to check out with everyone!!
