ALL:

  • Earth Burgers are VEGAN but they are NOT GLUTEN-FREE because of the breadcrumbs. 

  • FOCUS POINT: Be mindful of keeping all walkways clear and clutter free including the back area by the ice bin/mop sink, the upstairs area for highchairs and the walkway down the bar. 

      FOH:

  • Highchairs CANNOT be put at the end of booths 2-5. We need to make sure this walkway is always clear for customers and employees. 

  • Openers: please do not put a long rug down by the booths along the bar. It creates tripping hazards for bar guests and people walking through.

  • Do not double stack cups in the drink rack. Once the drink rack is full, take it back to dish and replace it with a new one. You can also fill a cup rack back in the dishpit with your extra cups. 

  • Make sure the area at the top of the back stairs is neat and organized (highchairs, broom etc.) creating a clear path for guests.

  • FOCUS POINT: TAKEOUT - when bagging up orders, please take your time to ensure that all of the proper food items, sauces, utensils and napkins are getting into the bag. FISH AND FRY should come with lemon, tartar and slaw. Stab your takeout tickets at the end of the bar once you have given the customer their order. Thank you!

       BOH: 

  •  When using the shop-vac, do not use the outlet by the hand washing sink. There are outlets in the dishpit and by the soup station that are usable. 

  • Weigh every portion of sharp cheddar every time you can.

  • At the end of the night, make sure the burger bun bags are tied off. Burger boxes need to be saved and returned. Do no not break the boxes down, bring them back downstairs. 

FOCUS POINT: When reheating soups, beer cheese etc, you should be using a new back for the new hot held item. Do not refill the old burnt one with new product.
