  • We have new salad bowls! Side salads & large sides will come in these stainless bowls, and half sides will now always come in blue bowls. Soup cups should only be used for soup. Also please don’t put salads straight on paper...if someone orders a salad on the side of something it should go in a bowl!

FOH:

  • Make sure to ask if people want the holiday crowler vs. normal crowler.

  • Crowler stickers are here! Put them on as neatly as possible. And FYI there is an easy peel slit on the back.

  • Make sure to check the Tap 13-24 bucket regularly! It has overflowed a few times, so we want to be checking it consistently throughout the day. At any shift change (coming or going), please check it. Also if you go change a keg or stock packaged beer, check the bucket!

  • If someone calls for a reservation and it is less than 10 people, please tell them that they can come in as normal and have first come first serve seating. People should only be directed to K10’s email if it is more than 10 people. It’s also helpful to get more information to weed out reservations that may not work (i.e. someone wants a Friday night reservation for 30 people...you could easily tell people no right off the bat).

  • During this time of year especially (although this is pertinent all year long) when lots of gifts are being bought/given, we will honor the “free” fill with a 64oz/40oz hydroflask purchase by providing the buyer a gift card for the fill amount (so $13 for 64oz or $9.50 for 40oz) and giving that to them along with the hyrdoflask. This then allows the recipient to come in and get that hydroflask fill for “free.”

    • To ring this in, please ring in the hydroflask purchase as normal and then ring in a gift card purchase for whatever amount, and then go back to the offsite page and select the appropriate hyrdoflask purchase fill discount button. If you have any questions please ask a manager!

BOH:

  • Queso awareness week! Reconstitute throughout the day so it doesn’t get crusty and dried out by the end of the day. Also make sure to scrape as much as you can off the edges consistently throughout the day too!

  • If someone orders chicken on a salad, cut the chicken into strips. The add on chicken for a nacho can still be diced.

  • As you go into the walk-in to grab something, it wouldn’t hurt if you could check FOH’s dump bucket as well (just a quick glance). If you notice it getting full, let someone know! Also thanks to you BOH’ers that have helped clean up that mess! You rock.

  • As you’re parking down the street or in the Team Oregon lot, please try to pick up garbage if you see it, even if its not on our property! Makes the surroundings look a lot nicer for customers coming and going.

  • Winter Menu changes will happen on January 11 & 18 (both Fridays). FYI for ya if people are asking.

  • Autumn Farmhouse 2015 is available for employees to purchase by the case only for $12 (breaks down to $1/bottle). This will be available only at the tap room, and if you’re interested please inquire with FOH.

FOH:

  • Please only offer chili as an entree bowl, do not advertise the cup option. Obviously if someone wants a cup they can get it, but we want to push the bowl more. The cup option can be found on the secret menu for that exact reason.

  • If you ever feel like the cooler is super crammed and you’re having a hard time changing kegs or getting to packaged beer, please ask for help when moving things. If you notice brewery-specific stuff in your way, feel free to ask a brewer to help you move things around.

  • As we start to label crowlers with the holiday Santa labels, make sure the 32oz. to Freedom is crossed off with black sharpie, and make sure it is crossed off as neatly as possible. We will have decals to cover this come next Wednesday, 12/12, which will be a neater solution.

  • We will want to have a couple crates of holiday Santa labeled crowlers available to use if people request them, and also available for pub transfer. This will be an easy project to tackle during some of those wintertime slow times!

BOH:

  • In order to make sure that the marinated mushrooms don’t get served super oily, start your day with a strained 6-pan of marinated mushrooms from your main back.

  • The guac in ramis should be level-ish with some peaks and valleys, not overly heaping. Try to keep it consistent!

  • Keep an eye out for a regular chili procedure, especially for the garnishing portion.

Make sure to let the brisket ends caramelize on the flat top for awhile before adding the sauce to it. This will ensure that it doesn’t get too saucy!

FOH

  • It’s corni filling awareness week! Paige will be compiling a how-to/FAQ write up that will live in the binder. Once this is posted is its required that you read it and make yourself familiar with it. There may be some minor procedure changes with it. In the meantime when we’re filling cornis, 1) make sure to only have clear beer coming out of the CO2 blow-off line. Don’t take it off when you see foam, you have to make sure clear beer is coming out! And then 2) do not fill it too fast. It should be a VERY slow, VERY soft hiss coming out of the blow-off line. If it goes too fast it creates a ton of foam and can also uncarbonate the beer. In the meantime before the write-up if you have any questions please ask a manager! 

  • Always look for pre-broken-up single cans before you break up an existing four pack. All it does is leave us with a bunch of loose cans!

  • Make sure you are using the organic milk for the FOH milk stor-n-pours. 

  • Put the sandwich board out at night and bring it in in the morning please! It got added to FOH lists as a reminder:)

  • Leave caramel out at room temp (do not refrigerate) so it doesn’t go out cold and the consistency stays saucy.

Please keep the barrel at the end of the bar (B10) clear at all times...there should be no junk left on it, it looks cluttered and like a junk drawer!

Be on the lookout - soon the apple handpie will start coming with a house-made caramel sauce. Please get some feedback on this as you sell them, FOH!

We are going to implement an overarching scooter/bike/skateboard ban. This has become a major safety issue, and we’ve had some very close calls within our parking lot.. Instead of trying to tell parents to be careful or keep an eye on their kids as they scoot/ride around, we’ve decided it’ll just be easier to prohibit them overall. We will be coming up with some good signage to put up to make it more obvious, but in the meantime please communicate this with people as you see it happening. You can let them know that no riding is allowed anywhere on our property (patio, sidewalk to the south of the tap room, or parking lot). If parents still let their kids ride on the front, public sidewalk or in the street, there is nothing we can do except let them know that this is a high-traffic area and that it is at their own risk. If you have any questions regarding the policy or verbiage to use when speaking with parents/kids, please ask a manager. If any parents have any questions or complaints about the policy, please give them K10’s email and it can be dealt with accordingly.

BOH, we’re including you on this so if you are taking trash out/on break, you can feel empowered to say something or let FOH know.
