FOCUS POINT: Call Out Procedure! Remember to try to get your shift covered as soon as you know you won’t be able to work and always call the Taproom phone and speak with a manager! Review the procedure in your handbook if needed.
FOH:
Remember to have the kitchen FOH closer double count your till and back up bank!
When there are slow periods between rushes, use that time to reset for the next rush, spot sweep, stock beer, clean the windows, etc.
When restocking the front cooler please DO NOT put more than 2 rows of the same beer. It is ok to have open spots and make sure to properly rotate the dates!
FOCUS POINT: Consistency! If you sign off on doing something please actually do it and double check you hit all the things you marked off on ex: outside heaters, dishwasher, sweeping, etc.
BOH:
FOCUS POINT: Tightening up closes! Make sure to not cut corners when closing. Put garnishes away, wipe the line and keep tidy after doing the flip, sweep and mop, etc. Don’t rush through the motions, stay consistent!
Tracking; Sweet potato fries were up 4 lbs… Make sure we are weighing them out and not under portioning!!
