ALL:   

  • Bourbon Month is coming up faster & faster! Please encourage guests to sign up to our Newsletter with the QR codes found on the table tents. The newsletter going forward is going to be the fastest way to get news about all things Block 15 Marketing as well!!   

  • Bourbon Month Specials: Cajun Red Beans & Rice will replace the Stroganoff Pot Pie (likely before February), Arugula & Date Salad, Maple Bourbon Bacon Patty Melt (it's a fun one to say all month!). Sarah will send out more information about these specials via Hotschedules.

  • Magic Mushrooms are bubbly hot, so please let guests know that the food is hot so they don’t burn their mouth while eating. Also please let guests know that the Magic Mushrooms are indeed an appetizer and not an entree–though it all depends on how hungry a person is. 

  • Bier Cheese is now dished by the food runner/server for pretzels orders, so please thoroughly read specs on those pretzel orders! 

  • Pretzels do not automatically come with bier cheese or stone-ground mustard, so please ask guests what sauce they would like with their pretzel and use the prompt in TOAST for each order. 

  • FOCUS POINT: Thorough Cleaning & Task Completion Awareness! When closing let’s be sure that we are thoroughly cleaning whether it's the grill or large debris on the floor let’s be sure to be thorough so we don’t create extra work for others.      

       FOH:  

  • When doing beer restock, please keep the cans/bottles organized in the beer cooler as well as in the beer walk-in. Please do not create mixed packs and keep like beers with like beers in the same flats down in the beer walk-in. For inventory purposes we must keep beers separated with the same flats of beer. When the beers get mixed it causes serious inventory issues. Elise will be sending a Hotschedules message with more follow up information, so be sure to check for and read that message. 

  • Block 15 wine–When guests order our wine please ask if they have had our wine before & offer tastes as our Rose’ is not your basic Rose’.        

  • FOCUS POINT: Cheese Awareness! Now that FOH is in charge of bier cheese, let's make sure that the cheese is a good consistency, hot, and has enough water in it–communicate with the kitchen lead if the cheese is too thick and if it needs water. Also be sure to read the specs on pretzel tickets as they do not automatically come with bier cheese!      

       BOH:

  • When cleaning the hood vents please be careful & be sure to grab them by the handles–the inside of the vents are sharp!! Please utilize the accident log if you do hurt yourself.

  • Kids pretzels are fragile and are breaking more than the big pretzels, so prep will begin portioning 6 pretzels into a deep 6 pan so that they don’t get shoved in the back and broken. If pretzels do break, padd them to the waste log!

  • Kitchen closers–under & behind the fryers need to be cleaned nightly.  Please be extremely careful when pulling out the fryers as that oil is hot!
