ALL:

  • Food feedback: This week we are looking for feedback on Biscuits for Brunch and Nachos at the Pub.

  • Remember, less is more when it comes to garnishes, especially on soup because it can still alter the flavor of the food if you add too much.  It's just to add a nice touch for presentation!

  • For kids side options the “veggie sticks” will now come with carrots & celery. Also wings will now start coming with both carrots and celery again.

  • We will have Figgy Pudding back as a holiday dessert, coming soon. :)

  • Let’s remember to keep conversations appropriate while on shift, particularly in the kitchen space (especially at Caves where the hallway is open to customers) even when you may think customers can't hear you, they often still can. This is directed to both FOH & BOH.

  • It is the expectation when you are actively working that you are practicing social distancing. When on break or after shift, members of the same household may sit together. The Brewbar and Bar seating at B9/10 may only seat 1 employee/ household at a time. Furthermore, changing out of your work clothing does not alter these rules. It is not about the perception to the guest but the actual practice of safety and social distancing that we are after.

  • We are asking employees to limit their stay after work to 90 minutes or less.

  • Please sanitize the breakroom table after use so it is clean and ready for the next employee to use.

  • You always have at least one manager on duty at all times. Please prioritize utilizing them before asking a manager off the clock for assistance. If necessary to utilize them, please start with “may I ask you a work related question?”

FOH:

  • Servers please make sure the large black rug is in front of the server station/ ice bin Upstairs and not left on the railing during service!!

  • Desserts are missing from the back of the beer menus temporarily while we have an abundance of packaged beer to have listed, but will return shortly when we can fit the addition of desserts back on the menu.

BOH:

  • Closers: please reconstitute Queso, Bier Cheese and Black Beans with room temperature water when taking it down for the night. Everyone, keep up the good work of checking quality and reconstituting throughout the day with hot water.

  • Please garnish the Parma Rosa with a bit of parsley for a pop of color. 

  • When perforated sheet pans are clean, let's immediately return those to the mac noodle drying rack, not on top of the oven with the rest of the sheet pans.

  • lease don’t set dish soap on top of the dishwasher in the prep kitchen. This causes it to leak into the dishwasher and make a sudsy mess.

  • Prep, let's make sure to always cut Sous Vide chicken and then weigh it to be as accurate as we can with waste and loss.
