Hypnosis is a story of two Barely wines, married into one, creating an amazing union we all get to take part of.
Rewind the clock to a year ago. After aging our Pappy’s Dark we brewed barely wine #1. This barley wine was brewed with 100% Marris Otter malt, a British Pale Malt, and a strong amount of Noble hops. Barley wine #1 was then racked into the freshly emptied Pappy’s barrels. Assuming that most of the bourbon was absorbed from the previous beer we let Barley wine #1 age for three months. Upon tasting we found the beer had picked up amazing, even over powering, notes of bourbon, vanilla, and oak. The aroma was so intense if you closed your eyes you would think that you were holding a pint of bourbon. This barely wine was like Pappy’s Dark on steroids without the soft caramel notes. With the bourbon notes overpowering, though amazing, we knew that this beer needed a partner to join with, creating one amazing barely wine. Now I could go into a discussion about blending, but I will save that for another entry. We knew that this ale needed a , a softer, warmer, carmel partner to complement the huge bourbon notes. Barely wine #2 was brewed. She was created using another fine base malt, Golden Promise, British specialty grains, and amazing aroma hops. London ale yeast fermented this ale to its amazing caramel, warming, and smooth glory. After some time apart the two barley wines were married early September 2009, creating “Hypnosis”. We gave these lovers a full two months of honey moon to get to know each other well, and boy did they come together as one. As with any great marriage, this Barely Wine is now one beautiful soul, full of love and warmth.
Hypnosis pours a shimmering burnt Carmel glass. Aromas of vanilla, oak, plum, caramel and bourbon begin the hypnotizing process. As your lips hit the glass this amazing elixir fills all 10,000 taste buds. Immediately, nothing else matter in the world. You are consumed with this liquid. The amazing flavors of malted barley, hops, plum, fig and bourbon mesmerize even the most hardened hearts. Wanting the experience to last forever you wonder if you should even swallow the beer, then you realize you are holding a glassful. Hypnosis goes down smooth, almost too smooth for how intense of an experience. A warming presence follows the beer, tingling your whole body. It is only after the glass is empty that you snap out of the spell, realizing you need a refill.
